Jakob has a milk protein sensitivity. So transitioning to milk at 12 months is a no go. His allergist mentioned doing almond (cadeys nut allergy :/), rice or coconut milk. Anyone know much about coconut or rice milk? I'm just starting to research.
A friend of mine has her son on Goats milk because of the same problem.

I'm no help but my mom fed me goats milk instead of formula when I was a baby. Not like the goats milk formula recipe you can find, just like straight goats milk she bought from an Amish guy.
babybarlow2014 we're going to try transitioning LO to WCM because I want her to have the fat and all the other things good for babes in it...
But that being said, I am allergic to dairy. Probably similar to Jakob, it's not the lactose, it's the protein that kills me. We keep Coconut and Almond in the house. To be perfectly honest I prefer Coconut (Hubby prefers Almond). I wouldn't hesitate to do Coconut for the LO if she's showing any signs.
Many of my friends have gone the alternative milk route with their kids, and are very happy. They are however very focused on ensuring the things missed by milk (fat, protein and calcium) are in their Little's diets in other ways. Avocado, beans, cooking with olive oil etc...
I have a feeling with your hubs being a chef there's lots of awesome food in your life, so I wouldn't so much and get that Coconut milk and see how Jake likes it!
Oh I did just remember that a friend of mine's kid can't have milk at all and they used hemp milk because it had the higher fat content/lower sugar content or something like that. I can ask her about it if you'd like.
DS1 had a sensitivity that caused him to vomit violently and have constant diarrhea. He didn't gain weight very much for the first year or so. It wasn't until we put him on cows milk that we noticed a pattern.
In all honesty, we just transitioned to it like you would with cows milk. Eventually we were doing ratios of rice milk and formula until just rice milk.
