I'm always needing inspiration for dinner. MH is super picky and Henry only wants chicken, pepperoni or pb sandwichs and cant have cheese. I love everything. Logan is starting to get picky too.
I did a whole chicken in the crockpot for the first time yesterday. Cooked up pretty quick and was really tasty. I've gotten 3 meals from it so far: chicken dinner first night, buffalo chicken over zucchini noodles tonight, and crockpot is on to nake stock overnight for chicken soup tomorrow. I feel so frugal!

This is one of my favorite things to do. We usually get at least two meals out of it and the chicken is so juicy and tender.
Sunday: Vegetable soup and sandwiches Monday: Baked pork chops, wild rice, green beans, asparagus Tue: Chili with corn muffins Wed: Probably chicken and vegetables Thur: Baked tilapia with rice and vegetables Fri: Maybe breakfast for supper
roo1582, do you have a recipe for the tomato soup? Is it from scratch or using canned tomato soup as a base?
One of my goals is to start using my crockpot while I'm at home now but I really have no idea how to do it. Whenever I tried chicken, it would come out dry and since I don't eat it H had to eat all of it and try to describe what I had done. I think one problem was that I used boneless breasts and I don't think they work as well. Does the whole chicken work better? How do you do it? (Tell me as if I were a 5 year old, I'm really that bad when it comes to cooking meat, poor H).

Two themes that are appearing in my meals 1. Dinner out with parents/inlaws. They want as much time with the boys before we move. 2. Frozen things, I'm trying to use everything in the freezer. Some of it is getting tossed though.

Here is the recipe. You will see two versions: stove top and crock pot. It is honestly one of my favorite soups. It uses canned diced tomatoes and chicken broth, so its pretty easy.
