This may fall under the realm of "salad" but on Sundays I roast a bunch of sweet potato cubes and cauliflower, and make quinoa. Then during the week I combine the sweet potato, cauliflower, and quinoa with black beans, massaged kale, caramelized onions, sauerkraut, carrots, and red bell pepper. Top with an almond butter dressing.
I also bring smoothie bowls for breakfast, but they would work equally as well for lunch.

I normally do a sandwich with some fruits and veggies. Sometimes I'll buy some frozen meals and take those, and I normally wind up going out at least once to mix things up. Not the most exciting fare, but it gets the job done.

I'm bored with my usual too (Greek yogurt with sliced berries, cereal bar). It's the planning that gets to me, I have good intentions then by Wednesday I'm frazzled and grab for the yogurt.
I'll take a bag of the Steamfresh vegetables. Usually I'll do the ones with pasta in them or the protein ones so I don't feel like I'm eating a pile of just vegetables.
Not sure if you like salami or banana peppers, but if you spread plain cream cheese on a piece of salami and add a banana pepper to it, its pretty tasty! It's my go-to at least once a week.
When I did work I used to make pretty elaborate sandwiches. So I would keep a loaf of bread, cherry tomatoes, arugula, roasted turkey and salami, Dijon mustard, cucumber, avocado and mayo in the fridge at work. Then I would bring fruit and nuts to have on the side and dark chocolate for a snack.
billyhorrible, has a good idea with the quinoa. It's so easy to make and then you can just add whatever leftover stuff you have from dinner to it. Like last night we made fajitas, you could just mix the leftover peppers, onion (and meat) with the quinoa and then you have a filling "salad".
I really try to bring leftovers from 2 days before, just so I'm not eating the same thing for lunch that I had for dinner the previous night. Also keep things around like tortillas or bags of frozen rice, that way you can just quickly re-purpose most dinners into a new lunch!
