Mine is: Sunday- my SIL and her family is coming over so we are having baked brown sugar garlic chicken over rice with corn Monday- Cincinnati chili Tuesday- we have a training so eating at work Wednesday- hot dogs and salad Thursday- vegetable soup Friday- tacos
Sunday: Crockpot meatloaf and potatos Monday: hamburgers and macaroni and cheese Tuesday: out with MIL Wednesday: meatball subs Thursday: breakfast for dinner Friday: leftovers

No clue what days I am making things yet but ... - caldo verde - pasta with roasted tomatoes and chickpeas - burrito bowls - homemade pizza - veggie burgers - caramelized onion quesadillas

Today: lasagna There's enough that it should cover two nights of leftovers. Then we have sloppy Joe leftovers & general tso's chicken. We should be good with clearing out the fridge until Friday, I'm pretty sure. The ILs are visiting this weekend so if we don't see them Friday night, I'm thinking homemade pizza. I'm loving the saving of money this week since DH is taking me out Sunday & I want to volunteer to pay for a meal with the ILs.
S- beef fajitas, rice and beans M- parm crusted chicken and ravioli with marinara T- roasted pork tenderloin with pan sauce, basil orzo, roasted zucchini W- I'm out for MNO, DH and DD are on their own. They will likely eat leftovers. T- breakfast for dinner F- chipotle chicken chili S- We will either grill steaks or get Chinese take-out.

I'm making double recipes this week and freezing some stuff...my freezer stash is gone and I loved having stuff to just pull out in the mornings.
Sun: Orange beef, coconut rice (freezing half), steamed broccoli Mon: White chicken and jalapeno chili (freezing half) Tues: Ham and scalloped potatoes (freezing half) Weds: Grilled chicken and mushroom risotto (not freezing) Thurs: Blackened chicken Alfredo with broccoli and fettuccine (not freezing) Fri: Going out for Valentine's day Sat: Not sure...I have 2 pork roasts in the freezer, may roast one in the oven for Valentine's dinner with DH. Will probably freeze half of whatever I make, the roasts are 3lbs each and have almost no fat on them.
