This is a freezer clean-out week for us, so at least one meal each day must use something out of the freezer.
Today: Loaded Potato Soup (using a quart of frozen mashed potatoes) Tuesday: Beef Brisket (frozen), Corn Bread, Green Beans (Also frozen) Wednesday: French Toast Casserole (from frozen Brioche) & Ham slices Thursday: Cheeseburger Casserole (frozen tater tots & ground beef) Friday: something with our last bag of frozen shredded chx Saturday: leftovers after work Sunday: Packaging the new round of freezer fodder

This is the sauce recipe I am using: www.wholefoodsmarket.com/recipe/curry-coconut-peanut-sauce. I'll just sauté the eggplant and simmer it and the chickpeas in the sauce once it's warm. I haven't made this exact recipe before, but it looks promising!

Monday - Cookout Cook-In: Baby cheeseburgers, hot dogs, baked beans. Tuesday - Beef and noodles served with green beans. Wednesday - OUT (Chipotle) Thursday - Baked fish, mac n cheese and veggies. Friday - Honey mustard chicken over rice served with salads.

robotpcr, I actually had to switch Mon and Tue on my menu, so I made it last night. It was delicious! It would be amazing on grilled chicken, but I also liked how the peanut and coconut milk combination was rich enough to make the vegetarian version a perfectly filling dinner for a 3rd tri pregnant lady. Already looking forward to the leftovers.
