I made it themed just for @scoop.
What do you cook for on-the-go/picnic food? I'm eating chicken cherry lettuce wraps, minus the lettuce today. I'm spending all day, every day, in the blueberry field right now while our UPick is open and I need some ideas for food to make ahead of time and eat cold.
My go-to is a super easy pasta salad. I use elbows. For each box of pasta, you add 1 scoop of mayo and half a bottle of Italian dressing. We usually toss in some chopped veggies and grilled chicken. Delicious at any temp!
I take this guacamole salad (Ina Garten) to any pot-luck type picnic thing. It's always a huge hit, I get asked for the recipe every time. It's also yummy added as a topping to hot dogs or hamburgers. www.foodnetwork.com/recipes/ina-garten/guacamole-salad-recipe.html

My mom makes a killer pasta salad. She uses rotini noodles, diced bell pepper and purple onion, diced cheddar and pepper jack cheeses, diced ham and diced pepperoni. She mixes it all with a creamy Italian salad dressing and shredded parm cheese. Then lets it sit in the fridge overnight so the flavors blend. It's so good and easy!
