B was MSPI and I've got a ton of resources for you. Hidden dairy (whey, casein, etc) makes it hard to eat premade items, but health stores (Whole Foods) do have some options. I'll send you a FB message with more info. I'm mobile here and it gets tricky linking.

I have no real advice for you, just that I'm sorry you have to go through this. I was lactose intolerant growing up, but with in the last two years I've been able to eat all the diary without any problems. My point is I hope he grows out of it
So A is really intolerant vs allergic. He can have some dairy, we just need to restrict it quite a bit. We have had his allergy testing but no blood work to determine if A has elevated IgE levels, in the absence of that though, I'm confident we are not dealing with a true allergy. If Si has an allergy as opposed to an intolerance, it's possible that could cause some of his wheezing.
Ok, but that's not what you asked me. This is a list I used when I was pumping while we expected we would do a dairy challenge at some point.
As for what DC is giving him, I would ask the DCP not to allow any foods other than what you send, under any circumstances. At this age, I don't think it's that difficult because they don't know if they are not getting the same cupcake everyone else if there's a little birthday celebration. When DC has a potluck type party, A can't have anything any of the other kids or teachers bring. I make a big batch of sunbutter banana muffins or some kind of treat like that, so he can enjoy something and they can offer them to the other kids.
Are you planning to cut eggs? We sneak a lot of veggies in that way. Obviously, nothing is sauteed in butter. We do EVOO or red palm oil. We add spinach or chard to just about everything: pasta sauce, pancakes, pesto, carrot raisin bread, smoothies, frittata, quesadilla (you'd need to use Daiya or something instead of cheese).
A won't eat scrambled eggs, either. He does love the little egg omelette cups though. He's probably eat those every day. I usually have several different kinds in the fridge at all times. Good way to use up random veggies in the fridge and have them get some protein.

Yes, just mix it all up like you would a scramble or omelette and put into lightly greased mini muffin pan. I know with A it's a texture thing, because if I gave him the exact same thing as a scramble he wouldn't touch it. He loves quiche, too, but again it's because it's more firm.
