Anyone still meal planning? Since I've seriously started eating healthier and DH's work schedule changed I've been figuring it out day by day. Not having a plan I feel like I've spent way more money than normal on groceries.
Tonight we are having grilled chicken with rice and salad. I'm going to sit down and figure out the rest of the week during nap time so I can get to the market after school tomorrow.

It's going to be in the 90s again this week and it's just too hot to cook. Today is comfortable so I'm making zucchini noodles and red sauce and also doing a bunch of baking for the rest of the week (homemade bread, muffins for snacks, cookies for the kids). I think I'm going to cook up some meats today too - bacon and beef - and hardboil eggs to use in meals later this week. Otherwise, we're doing cold foods this week and just trying to use the veggies from our garden:
I make my own mayo for a lot of these salads. It's so easy and tasty if you've never done it. Just two egg yolks, two T ACV, 1T mustard, salt, and 1/4 t cayenne. Put it in the food processor and then slowly drizzle in olive oil a little at a time until you've added about 1.5 cups.

For anyone who made freezer meals will you share the recipes liked best? I started making them but then R came early and my mom used the ones I did make for the kids while we were in the NICU.
My schedule is nuts in the fall between classes and clinicals and the older kid's activities so I thinking about going this route or maybe cooking for the week on Sundays. Anything to make life a little easier.
