I'm intrigued by the chicken and Mac. If I google that I should be able to find the recipe? Eta: oh wait maybe I read it wrong. I thought it was a casserole but now I'm thinking its chicken with a side of Mac? Lol oops
That's exactly what it is! You can always shred chicken in your Mac. I've done that before - I'll make homemade Mac, shred the chicken in, and toss in some buffalo sauce.
Everyone's meals are making me jealous this week. We've packed 99% of our kitchen, so our week looks like this:

I've realized that I really need to step up my meal planning during the school year. The weeks I had a plan last year went more smoothly and involved less pizza than those that didn't. I've made a preliminary list of things that I make semi-regularly and divided them by prep/cook time. So ladies who rock at planning, any tips? Should I make a spreadsheet or am I thinking too much into this? How do you decide what you're having? How far in advance do you plan?

I do two main types of meal planning:
Once every two months or so, I go through my Pinterest boards, find some freezer meals or recipes that could easily be converted to freezer meals (ideally the type you put in a bag and then dump into a crock pot). I normally aim for around 10-12 meals worth of recipes. Then I do a huge Sam's Club/grocery shop for ingredients, invite MIL over for an afternoon to entertain DS, and H and I just go nuts in the kitchen chopping, dividing, and freezing. It's a ton of work, but so worth it, because then I've got at least one meal a week for the next couple months where I have literally just dump it in a crock pot before going to work, and then dinner is maybe just boiling some pasta or whatever to go with it.
On a weekly basis, I go through my grocery store's ad to see what meat is on sale, figure out if there's anything I need to use up, look at our schedule for the week, and then come up with a game plan from there. I have two files of recipes I use relatively regularly, so I'll pull whatever ones I decide to use that week, and then write my grocery list from that. No spreadsheets involved here. I normally keep one day as leftovers/take-out/go out as kind of a "flex" day for when life happens.
Sunday: Wet Burritos. My cousin from out west said she had no idea what these were so I'll explain in case this is strictly regional. You just make a burrito with whatever you want (we did refried black beans, onions, black olives, chopped tomatoes, cheese, jalapeno and cilantro) then you cover them in red enchilada sauce and bake. They were SO. GOOD.
Monday: Out
Tuesday: Pasta with roasted veggies
Wednesday: Baked veggie quinoa
Thursday: Sandwiches with fresh mozzarella and pesto

All I've got so far for the week is the broccoli cheese soup and tuna melts I didn't get around to making last week and Swedish meatballs with noodles.

Arizona. I told her what it was and she said "oh, we call those enchiladas". But it's still not an enchilada. Where I am the majority of the mexican restaurants say you can have the burrito wet or regular AKA with our without sauce.
