I would not take the stroller, but I would consider how you will get the carseat through the airport without it. (I use a rolling bag; one time my h just carried it but it gets heavy).
I would use the carseat base on plane. Does the base have a seat belt path? (My Britax does.) You could attach it that way if the seat doesn't have anchors.
If it were me, I would not take the rock n play. I find we're on the go so much on trips that LO usually has to nap in the carrier, in the car, etc. Hopefully all of the stimulation will wear her out? Good luck and have fun!

- If you are comfortable wearing her A LOT then definitely leave the stroller. I personally like the option to have them in the stroller occasionally. Especially if they fall asleep, it's a great place for them to nap on the go without killing your back or shoulders. An option would be renting one in Seattle for those 2 days? I've rented a stroller at my destination once and it was a great option!
- You do not need the car seat base on the airplane. You will use the seat belt through the lap belt path on the car seat. You can also do this in your rental car. I'd practice buckling it in without the base before you go (YouTube videos are invaluable here)!
- I'm not sure how you would get the rock n play on the plane. I'd leave it behind. I think DD being out of her normal routine and environment, she may sleep more and easier. At least that was my experience. I can get DD to fall asleep by bouncing in lieu of a rocking chair. You may have to resort to that. If it is a bigger hotel with a gym, you might ask if you can borrow an exercise ball you could bounce her on. Just a thought!
Ok seems like consensus is to ditch the rock 'n' play. Should we take a pack 'n' play then? I'll call ahead tonight and see if the hotels offer cribs. If the cribs are a sure thing, should I leave the pack 'n' play? That would be great not to lug around.

I wouldn't. That just seems like SO much to have to pack and check on the plane. I'd be shocked if your hotel didn't offer a crib or pnp. When we travelled in May I had a crib in the room and ended up sending it back because she just slept with us in the end. It was way easier.

Taking a stroller is pretty easy - use it in the airport, gate check it, get it as soon as you get out of the plane, and use it again. The only pain is taking it through security (you have to fold it and put it on the belt), but since you're on a direct flight you just have to do it once. I would take it just to have an option other than carrying her all the time.
As everyone else said, though, I would not bring the RnP. I wouldn't bring the crib, either. I think it's pretty standard for hotels to have PnPs or cribs - call ahead to check.
One tip: don't skimp on the diapers and formula (if you're FF, I don't remember) in your carry-on. If your plane is stuck on the tarmac because of a thunderstorm or whatever, you do not want to be stressing about not having enough diapers.

I would suggest taking the stroller (I was happy to have brought mine away) and as crimsonandclover said, just check it at the gate. Not only was it great to have DD in the stroller at times but also it was great to have the extra storage/diaper bag holder..
Also find out if where you are staying and if they have a PnP or crib (likely they do)
Car seat - I did not bring mine as I rented a car with one.. I had DD on my lap..I could imagine it would be annoying to bring but obviously very important so not sure if you can go without.
I brought waaaaayyyy too many receiving blankets, bibs, everyday clothes, and toys..
I got the baby gourmet travel packs of oatmeal (great for diaper bag) and the squeeze baby food. Worked out well. I also started the puffs a few days before to make sure she could handle them/liked them. They were a HUGE hit!!
I was expecting blowouts on the plane so I had about 18 diapers in the diaper bag. In actuality my baby had travellers constipation and only pooped 4 times in 10 days (my girl is a once - a - day-er)
