Monday we were at SIL's for a BBQ, hamburgers and hot dogs. Tuesday: Chicken "quesadillas" (I call them this because it's what my mom called them, but it's more of a chicken/rice/cheese/salsa roll-up than a quesadilla) Wednesday: Chicken broccoli fettuccine Thursday: Probably carry out on the floor of our new house because it will be OURS! Unsure about the rest of the week/week-end. I'll need to go shopping at some point.
My H won't be home tonight and my ILs are coming tomorrow, so the only thing I have planned is a pot roast Thursday. I am feeling rather uninspired again & need some new things for next week!
Last night ( before the virus hit): bbq chicken, wild rice and steamed veggies Tues: LO for DH and DD; chicken noodle soup or PB&J for me Wed: spaghetti w a side of broccoli Thurs: pizza night Fri: out
I'm feeling uninspired and looking for things that take less than 20 min to make during the work week. By the time we get home at 5, I'm stressing over dinner, getting V settled and everything else that needs to get done. Any tips???

txngrl31, like carrots, the crock pot gets used a lot in my house. We also do a lot of "big" meals that make good leftovers on Sunday's - think lasagna, soups, etc. Once every month or two I do a huge batch of freezer meals, things I can just dump into the crock pot in the morning, or dump into a skillet to stir-fry. That normally makes a meal or two. Then throw in a taco night or something else easy, and we're almost set for the week.
I definitely need to start prepping the night before carrots,. V usually eats what we do, so I'm in a rush to get it fixed. Like W, V starts yelling for dinner round 5:30 pm hahaha. And she has become a super picky eater.
jillywilly, after sitting in the slow cooker all day, sometimes my chicken gets overlooked. I'm assuming the frozen meals do better with the long cook time? Do you dump it in frozen?
carrots, DH gets home from work much later, so I try to eat a little bit with V since he is never home for dinner time during the week. Like you, hopefully we can figure out this whole thing and eat as a family! I agree though-- we are all just trying to survive haha.

txngrl31, I normally pull them out the night before and stick them in the fridge to get them defrosted enough to dump out at least, so the chicken normally still is a bit frozen. I also have the crock pot that goes to warm after 8 hours, which has greatly improved my chicken. I don't know how I'd get dinner done half the time without it, since we do dinner as a family ASAP after we get home.
