Lightly buttered white bread, two slices of american cheese, and if I'm feeling crazy a few slices of turkey inside. Also, have to have tomato soup for dipping.
I ate so much grilled cheese in college because it's my favorite. White bread, butter, 3 pieces of cheddar, maybe turkey, and I always want tomato on it if available.
In college my favorite had bacon and tomato on it. You had to go to the 'secret' dining area that was open only from 11-2 on weekdays. It was hidden in a back corner. It was on Texas toast.
I wish I could convince H that grilled cheese is a viable dinner option. According to him, there isn't enough protein.
Ideal bread is sourdough, though we rarely have that in the house, so normally we just use whole wheat, which is our staple bread. Two slices of Muenster, preferably, cheddar if it's what's in the house. I'll often add in a slice or two of turkey or ham as well. Butter on one side of the bread. Have never tried sprinkling sea salt once it's done, but it sounds delightful, and I'm probably going to try that next time. Or garlic salt would probably be good, too. It must be dipped in tomato soup.

What if you add meat to the sandwich? Then is there enough protein? My H uses the "there needs to be a pound of meat on the table or dinner is lacking in protein" school of thought as well though, so I feel your pain.

Bread buttered on the outside, and 1-2 slices of cheese on the inside. The only slices of cheese we have around here regularly is American cheese, but I think the best grilled cheese I had contained cheddar and jack.
My high school job I was a cook at this "snack shop" (though it had quite the menu). Anyways we had a triple grilled cheese in the menu and it was by far my favorite. 3 pieces of bread. (Your choice, mine is wheat) Slice 1: buttered on one side, 2 pieces of American cheese on the unbuttered side. Slice 2: buttered on one side, Swiss cheese on the unbuttered side Slice 3: buttered on one side, provolone cheese on the unbuttered side. Cooked on a long griddle so everything melts nicely before stacking. We could add tomato and bacon if requested, but not many did. I like to dip in tomato soup, if there isn't any then ketchup. Hmmm- DH is going out for drinks with a friend tonight, looks like C and I will be having grilled cheese and tomato soup for dinner!
Who uses mayo on a grilled cheese?! Is this a thing? *Waits for replies to see*
I threw that out there because I saw it as a cooking 'hack' that some people swear by. Apparently the mayo does not burn as quick as butter (so a higher boiling point or something like that), so it allows the sandwich to cook longer without burning. I tried it and was thoroughly unimpressed.
Butter is always better. Plus, just cook it on low and you'll be fine.
I do think there will be some people who regularly use mayo instead of butter.
ETA: by cooking hack, I mean there was some video floating around that recommended using mayo a while ago. It was pretty widely circulated.

We had discussed this on J13 a while back and I tried it. I am now a mayo person (but it HAS to be Duke's Mayo)
I ate a lot of fancy grilled cheese while I was pregnant. Always butter the bread. And my favorite was slice french bread with brie and apricot preserves.
I also love cheddar with bacon. Or just whatever cheese and bread is available accompanied by tomato soup. Yum Yum.
I've done (fake) bacon on grilled cheese before and it's yummy but gets a little soggy. My favorite thing about bacon is the crunch factor, and you lose some of that in a grilled cheese. Maybe real bacon stands up better?
Picking an idea grilled cheese is a tough one because there are so many. I like my grilled cheese on onion rolls, 1 slice of american, 1 slice of swiss.
Another topping to consider is chopped black olives. So good on grilled cheese.

Texas toast buttered only on the outside(sprinkle of salt in the pan when cooking) with Vermont sharp cheddar and a slice of American deli cheese to tone down the grease.
Hawaiian bread also makes a great grilled cheese.
ETA: I add a slice of two of whatever deli meat we've got in the fridge for H if I want him to consider it a meal.

First of all. You can't properly grill a roll like you can bread.
2nd of all. Do you just like to say things to rile people up? Black olives on a grilled cheese? WTAF.
WRONG. You can do this with the onion roll regular by buttering the outside of the roll, or flip it inside out so the onion part is inside with the cheese, and you butter the inside of a roll. All grilled cheese must be made on a george forman grill, or something alike. Griddle and spatula does not do the trick.
At my house, olives are on pretty much everything. Pizza, lasagna, in pasta, on tacos or quesadillas, etc. Give me ALL THE OLIVES.
Kristykristyleelee, I tend to think of grilled cheese as mostly cheese and maybe one other topping (bacon and tomatoes are two traditional ones thrown out here). I was just offering another suggestion if you happened to be an olive lover such as myself.
A panini would be like a grilled sandwich that possibly had cheese on it, but where cheese isn't necessarily the star.
