Help me make enchiladas (and other Monday randoms)

So I tried mrsmonogrammed's hack of putting a bunch of chicken breast in the crock pot yesterday and shredding it. I planned to make chicken enchiladas with it tonight, but all the recipes I'm finding have ingredients I don't have - like cream of chicken soup. Who puts soup in an enchilada? I was going to re-heat the chicken in a skillet with some green chilis, enchilada sauce and maybe some salsa because I have a jar to use up. Then roll into tortillas, top with more sauce, cheese, and tomatoes. That should work, right? I've never actually made enchiladas before (crazy, right), so please re-assure me I'm not ruining dinner.

I don't remember the exact recipe off the top of my head, but I put minced garlic, some shredded cheese, a bit of cumin, 1/2 brick of cream cheese, and jarred salsa with the chicken before scooping it into tortillas and covering with remaining salsa and shredded cheese and baking for ~15/20min.

jillywilly, I base my enchiladas on this recipe. It's basically what you're saying you plan to do. Since you already have sauce, just skip the first step.

My grandpa is having triple bypass surgery this morning and I'm sitting here at work trying to distract myself. I don't have enough PTO for both Monday and Thursday for thanksgiving-__-

It's very much a Monday feeling Monday here. I was in denial about my alarm this morning. O definitely shared his cold with me which means my voice isn't happy. Trying to figure out if Zumba is a great choice tonight because cold+asthma+exercise=not breathing/coughing/asthma attack.

But, Friendsgiving was a blast. We ate all the food and it was so good to see everyone. I'm looking forward to a week filled with people I love!

I have to share my experience from McDonalds yesterday because it was just so...nice.

There's a brand new one on the way out of the city for us and after a busy, overstimulating afternoon at the Festival of Trees we just wanted somewhere quick to eat before our drive home. We'd been to this location one other time before and it's nice and big and open and like, a nice fireplace seating and such. Even though it doesn't have a play Centre it's just very open and clean to walk around with the kids. So we suggested just stopping in there to my parents.

We go in, order our food, it's not super busy inside so everyone is more in relaxed friendly mode, lots of customers talking to my kids, employees all smiling, then the guy who I assume is the manager (and honestly looked like 15/16) came up to me and said if we wanted to get the kids sat down he'll bring us our food, so ok that was nice. Then he came up to us later and offered the kids mini ice cream cones and he was just so friendly and nice and you could tell he was so proud of his job and the restaurant he's running it was just so refreshing and great to see. I can legit say I had a positive, relaxing McDonalds experience in a nice clean area with so many happy employees..like I'm so proud of that kid for the job he's doing and I don't even know him lol!

Dropped DS off at school this morning and the heat was out. They said it would be back on soon but it's still a little weird leaving your child in 30 degree weather in a building with no heat - for an 8 hour day.

tiffbot, I actually had a really nice experience at McDonald's a few months ago too! The employees are so friendly.

Just 2 1/2 more days until DH is home, so I'm going to try to start the week off on a positive note and just get through it. It has felt like a long shift, so I'm really looking forward to him getting home. I know that the girls are too. A gets so excited whenever we hang out with any of my friends and clings to them. I guess that it's a refreshing change from just constantly seeing me. She won't even let me help wipe her bum after she uses the bathroom if someone else is here... sorry, friends.

I am currently sick as a dog, yet have to be at work.

My IL's have been here for 6 days and will be here for another 10 days.

It was raining last night, so my dog popped in the garage instead of the back yard, which I did not notice until I stepped in it while trying to get into my car.

I am already 110% done with today, and it has just started for me.

No idea how it will turn out, I can't remember which recipe I've used! I personally leave out cilantro though, yuck

BH was up at 4:50, LBB an hour later. Since everyone was up, I figured we'd leave the house early so I could take off early from work. In doing so I forgot my breakfast. And then my mom called and I ended up talking to her for so long I got into work later than I normally do!

And thank you everyone for helping me figure out dinner plans. I literally NEVER go into a new dinner without some kind of recipe, and honestly did not think chicken enchiladas would be so hard to figure out.

jillywilly I use the Homesick Texan recipe for sour cream chicken enchiladas. I usually have extra sauce, and it freezes great!

I happen to have just finished putting a chuck roast in the slow cooker for tacos. yum yum yum.

I can no longer keep BH in a diaper. Yesterday he was in a romper. Which he removed, in the car. When I went to get him out he was diaperless.

I changed him into a onesie, thinking that would fix the problem. He took the diaper off from under the still snapped onesie.

I threw a pair of leggings on him, thinking maybe something more form fitting? Found him with the leggings around his knees, diaper off.

It's going to be a long year.

I stuff my enchiladas with whatever meat I'm using, add some cheese, & then use enchilada sauce on top. Easy!

LO and I have been on the go all day & now I'm listening to her fight a nap by talking to herself. At least I got 150 bonus stars at Starbucks AND they accidentally upgraded my brewed chai tea to a chai latte?

We had a potluck thanksgiving dinner in my department today. It was so much fun and so much good food. Of course being a school, we have like 20 minutes for lunch so we ate like someone was chasing us, but it was good.

For my students who either dig in their diapers or take them off have them taped into place. You could also try snapping the onesie over the leggings. It looks like a Jane Fonda video but at least the diapers stay on?

You guys seriously rock. Turned out he needed a quadruple bypass once they got in there, but he's out of surgery and dr says it went really well! Thank you for all the well wishes<3

His DCP did that for nap today and it was a success. She also told me to put the ends of the tape in back, where he can't reach them.

Of course, today he figured out how to turn the knob at daycare and let himself out...
