1. In large bowl, beat butter and brown sugar with a mixer on medium speed until light and fluffy (about 5 minutes). Beat in egg and molasses. Stir in remaining ingredients except granulated sugar. Cover; refrigerate at least 2 hours. 2. Heat oven to 350. Line pan with parchment paper. 3. Lightly flour surface and roll out dough to about half an inch thickness. Cut with desired cutters. 4. Place on baking sheet and bake 8-10 minutes. 5. Let cool. Ice with royal icing, if desired.
For round cookies, place granulated sugar in a bowl. Shape dough into 1 inch balls; roll in sugar. Place cookies 2 inches apart on cookie sheet

There are two schools of thought when it comes to latkes, some focus on the potato aspect, others focus on the pancake part. We're potao-ers over here, so these are less pancake like and more mounds of golden fried goodness. It's a twist on the ones my dad used to make.
Latkes 2 lbs potatoes - use a mix of different types: sweet, Russet, Yukon, red, and purple. This is key! 1 onion 2 eggs 1/4 cup flour salt and pepper oil for frying
1) Grate the potatoes and onion with a large grater into a bowl of cold water.
2) When everything has been grated, drain the water and place the potato and onions on a kitchen towel. Wring out the excess moisture. You want these as dry as you can get.
3) Mix in eggs, flour, and salt and pepper to taste.
4) Heat oil in a large skillet until hot and shiny. Mound potatoes and onions in your hand to form small patties. Place patties in hot oil and cook, about 5 minutes per side, until brown and crispy. Drain on paper towels. Sprinkle with salt and serve.

Is the grating into water to remove the starch in them? Can I grate into a food processor filled with water?

jessila, it prevents them from turning brown while you're grating the rest.
DO NOT FILL THE FOOD PROCESSOR WITH WATER! If you use the food processor, make sure it's the larger grate setting. Depending on the size of your food processor, if you need to do more than one batch, put the first batch in cold water while you do subsequent batches.
