I am winging it this week, car is out of commission and we are moving this weekend so probably going to clean out the cabinets/freezer and have some casseroles/ soup and salad type dinners
M: filet mignon and sautéed broccoli (delayed vday) with some sort of dessert. T: roasted okra, cauliflower, Portabella mushrooms, onions and couscous W: Mahi-mahi and something T: fancy frozen pizza F: pesto pasta with sautéed mushrooms and something S: take out S: probably roasted vegetables again or maybe something in the pressure cooker

Can i have the recipe for pesto pasta?
I think this is how DH has been making it:
2 cups pasta 1 onion - chopped 2 cups mushrooms - sliced 2 cups broccoli - chopped 2 tablespoons olive oil 1/4 cup pesto (we use allessi) 1/4 tsp crushed red pepper
Boil water for pasta -- add pasta once boiling.
While cooking pasta.. In a large skillet, heat olive oil on low (or low flame) with cracked red pepper flakes. Once oil is hot, add onions and cook until translucent but firm. Add broccoli and mushrooms, toss and cover, stirring occasionally. Cook until both mushrooms and broccoli have softened.
Once pasta is cooked, drain and add to skillet to toss with your sauteed veggies. Then, add your 1/4 cup of pesto to the mixture, tossing until everything is coated. If it becomes too sticky, add a little bit of olive oil. Plate and serve
I also add a little bit of grated or shredded cheese on top.
