We're taking an adults-only trip this summer. Anyone want to recommend a fun spot west of the Rockies?
We like hiking, wine/beer, food, and museums. Bonus points if Southwest flies to the destination.
Portland is on our short list- anyone have fun suggestions for this city?
LOS ANGELES! We have so many awesome museums (I mean we have a museum specifically dedicated to neon art!) the best restaurants (Gwen, great name, great restaurant!) , great wineries about an hour or so away in Santa Barbara (or even Malibu Wine Safaris which I'm going to do in a few weeks which is 30 minutes from Hollywood and has ocean views and giraffes), and our hiking is world class. I feel like a lot of people don't like LA because they don't have someone who can tell them how to avoid spending all day in a car, but I've got you covered. Also, southwest definitely flies here.
Our favorite California trip, aside from to your hood before we were friends (sob, missed opportunities), was when we were to Napa and Carmel, especially the Carmel portion. We did some hiking in the parks near the resort (we stayed at the Hyatt Highlands with points, which was beautiful - highlandsinn.hyatt.com/en/hotel/home.html). We also did some wine tasting in the tasting rooms in Carmel, but didn't go to any vineyards bc of timing.
I also love Seattle, which you've vetoed.
I've wanted to do Willamette and Portland in OR, so I support that.

Just as an FYI for a central coast trip is that there was recently a big mud slide and Big Sur is totally inaccessible for the next 9- 12 months. You would still be able to do Hearst Castle and the elephant seals, but then you'd have to cut insland and take the 5 to get North to Monterey/Carmel.

Lake Louise and banff in Canada.
Glacier national park- I lived a summer there and it's amazing- but it's all national park- nothing else around- it spans into Canada and the prince of wales hotel is amazing
Another +1 for Vancouver! I'm not a vacation person, I get a lot of anxiety, BUT when I went there it was freezing, sleeting and miserable and still thought it was such a cool, fun city! So I think that's saying something
I had a blast in Santa Barbara for a bachelorette trip. There is a cute little Dutch town called Solvang that is great for restaurants and shops nearby.
If you're considering Canada and like wine and outdoorsy stuff, I highly recommend the Okanagan. H and I are going on a child free trip this summer, and we've been thinking about the Okanagan. The kettle valley trail is on our list of potential things to do www.kettlevalleyrailtrail.com

Vancouver Island is amazing!
I was going to recommend the entire central coast region as well, but with the same warning.
Moro Bay.... Pismo.... Cambria... Big Sur..... Monterey / Carmel / Santa Cruz.
We got married in Monterey/Pacific Grove. Then for our honey moon, we wandered all over the central coast with a combo of wine tasting, camping out of the Landcruiser, cute B and Bs, hiking, paddle boarding. It was great.
