This recipe was shared on D14 and we're trying it tonight. DH prepped it last night and I think it's going to be really good! The meatballs were time intensive. Next time we might just brown the ground turkey and add the spice from the meatballs to the sauce. Then serve it over rice noodles similar to a Bolognese. We are making rice and quinoa to serve with it tonight.
Tomorrow, we'll use the leftover rice and quinoa to make cheesy broccoli rice patties for a meatless meal. My kids pretty much eat anything in patty form so it should be a hit with them.

Last week, I discovered Quaker Chocolate and Salted Caramel granola bars. They are delicious. Since it's Easter season, Cadbury has caramel eggs out. They are my favorite Easter candy.
Last night I made chicken leg quarters in the crock pot with rice pilaf. The chicken came out really well. The rice was okay; that is the one thing I can never cook correctly for some reason. This week, we're also having spaghetti and meatballs and taco cups. I'm not sure what night we're having each one.

smallpotato, mmmm, those granola bars sound delicious! And chicken leg quarters are such an easy, foolproof dinner. I am not good at making rice on the stovetop so I just use our rice cooker to make plain rice. And it's sticky so it's easier for the kids to eat.
poptarts, hummus and peppers, and lots of berries.
On the meal front, I just mixed up the normal ground turkey we have in our meat sauce for spaghetti night to Italian sweet sausage and it was so yummy.
My fave snacks lately are Triscuits (shocking, I know. CARBS), specifically the Fire Roasted Tomato and Olive Oil flavored ones. SO GOOD. Get in my mouf. I also discovered Bear Naked Cacao and Cashew Butter granola this weekend. I bought it to put on my yogurt, but I can eat it plain by the handfuls. Oh, morning snacks are the protein balls MH makes.
My lunches are always the same. Ham/cheese on crackers or Triscuits and yogurt with granola. Sometimes leftovers. I'm trying to be better about that.
We're always getting creative with dinners when we can. Last night we had Venison Steak Diane and veggies. We had a Paleo chicken/broccoli bake the night before. I think we're having brats tonight (LOL, so creative Britta).

Red curry meatballs were delicious! The kids loved them too. The red curry paste was mild so if you want heat, add the red pepper flakes.
I baked the rice patties last night so quick dinner prep tonight.
Beets with vinegar and feta, roasted asparagus and hard boiled eggs. I made some granola today too. So many beets though. They are delicious (pressure cooker ftw).
EtA: to be clear, that's a beet salad. Asparagus is a separate thing. So are hard boiled eggs. I'm not mixing all that together.
