I'm going to a "Spring Cleaning" themed potluck on Friday and I want to use carrots because I have a ton of them (maybe 10 lbs?). What can I make with them? I would totally make carrot juice because these carrots are super sweet and juicy, but I have no juicer.

It's a gourmet/culinary potluck, so I really shouldn't ask someone else to do the cooking. But maybe I can do two dishes...
I have an absolutely amazing carrot cake recipe if you want to see it. You could totally have your baker do it. I get tons of compliments every time I make it. I used to have to make it into cupcakes and do a double batch for a charity bake sale every year at my old job. It was the first thing to sell out. I'm pretty proud of it. The recipe was developed by some friends of ours.

I have a kickass carrot cake recipe too. It's my most published recipe after the pumpkin pie. And my baker makes it for special orders all the time. I am so tempted. I've never actually tasted her making of my carrot cake. So it would totes be work research. And it would mean that I would have something to bring to the party if I don't get to making my dish (which I'm now thinking will be roasted carrots with chimichurri).
