1. The photo you post must have been taken within the prior challenge week (usually Thursday - Wednesday).

2. The photo must have been taken by YOU.

3. Fair warning: If you ignore rules 1 & 2, you will get flamed and disqualified. It's super serious.

4. The winner will be decided by how many "Love Its" they receive for their photo.

5. Each week's winner will decide the theme for the next week and so on.



Of course, if you are uncomfortable with any challenge you can sit it out.

This is a homemade turkey burger DH made for me in the shape of a heart. The bun (also homemade) is heart shaped too!

It was a boxed cake mix (Pillsbury Valentine's Funfetti) and home-made buttercream. I just use unsalted butter & confectioners sugar for the buttercream. Usually 2+ sticks and 4c of sugar, depending on the consistency I am going for.

Garlic Pesto Chicken with Tomato Cream Penne

Last night's chicken enchiladas! I'm mobile so I apologize if the pics are huge.

I made sauteed salmon with a honey-soy glaze, roasted potatoes and asparagus!!



Recipe for the salmon:

4 - 6 oz salmon fillets
2 T olive oil
salt & pepper
1/2 cup soy sauce
1 T grated fresh ginger
1 T minced garlic
1 T fish sauce
2 T chili garlic sauce
1/4 cup honey

1. In a saucepan, combine soy sauce, ginger, garlic, fish sauce, chili garlic sauce, and honey. Heat to a low simmer and reduce until it coats the back of a spoon. Set aside.
2. Pat the salmon dry and season both sides generously with salt and pepper.
3. Heat oven to 400'F.
4. In a large ovenproof saute pan, heat olive oil over medium-high heat. When the oil smokes a little, place the salmon carefully in the pan (careful for spattering oil!) and sear both sides until slightly golden brown, about 2-3 minutes on each side.
5. Remove from heat and place in hot oven for about 10 minutes or until the center of the salmon is opaque.
6. Drizzle sauce over salmon.

Thank you! I try to make every meal look appetizing with a little creative pizazz but not always. It's funny, I usually do this with our more healthy meals because DH is more likely to finish his plate if I present it to him like this. His idea of a gourmet meal is frozen pizza cut into squares and root beer served in a wine glass so... yeah. I am slowly but surely expanding his palate.

*There is a new cheese section in our grocery store. MH got a little over excited about their selection. It was so worth it though.

DH is the cook in the family so this is my "cooking fun" I get to deal with. I love him to pieces and he cooks delicious meals - but he also destroys our kitchen lol

ETA just notice the bottle of Jim Bean on the counter haha. Maybe that's why my kitchen is always destroyed haha

Late, but I made love chicken pot pies last night!


These are loosely based on Ina Garten's Chicken Pot Pies recipe. I just use Pillsbury pie crust.

Both! I have similar colored countertops and my cabinets used to be that same color. I even have a similar layout to what I can see there, with the sink being close to a random corner, and a big window over it.

the BEST chicken pot pie recipe!!!  Also her meatball recipe is to die for.
