Most recipes I just sub almond milk and earths balance and they come out fine. Oh and cornstarch/water for the egg replacer is what I have found to work best for baked goods. There are tons of substitutions out there though
How long will the cookies keep? We are going for a mini vacation on Wednesday and I think those would be perfect, but would probably have to make them tomorrow.

They freeze perfectly for months and then keep for long time out of the freezer, depending on how you store them (in my bags they keep for a month). I actually recommend freezing them now because it improves their texture.
Can you see that? Sorry it's disgusting. It's been used a lot over the years.
FYI, unbaked this is a delicious drink
The batter was delicious and the cake looks great! Do you frost it with anything, just powder sugar the top, or leave it plain?
I have done all of those things. I have a basic buttercream that I just sub almond milk and safe butter that's yummy. Also, (all of you foodies, avert your eyes) Duncan Hines milk chocolate frosting actually doesn't contain any milk and is good when you're feeling lazy.

Good to know about the frosting. I'll probably be lazy and do a little powdered sugar tonight I can't wait to eat it after dinner.

And if you leave some of it plain you can eat it for breakfast and call it a muffin. It's an all around win.

SAK I think someone switched my cake out in the oven because there is no way that cake didn't have eggs/dairy. It was amazing and even worked perfectly in my high altitude. I'm pretty sure that will be my go to chocolate cake from now on. Thanks again for sharing.
