Saturday - spaghetti and salad Sunday - cornbread and sloppy Joe casserole Monday - Asian beef and noodles with stir fry veggies Tuesday - deep dish pizza Wednesday - brats and green beans Thursday - black bean tostadas Friday - burgers and corn on the cob
I've been slicing up smoked link sausage and putting it on a sheet pan with cubed potatoes and another veg (we've done cauliflower, asparagus, and carrots so far.) Then spritz with olive oil, season, and bake at 350 till potatoes are cooked through. It's been so easy and so good.

I've been doing sausage over chopped cabbage/onions a lot and it is awesome. I usually make pasta on the side for the kids but I just eat a shitton of cabbage. Lol.

Did this and added a mustard vinegrette after it cooked. It was so good.

I did this the other day with mixed veg. Cabbage, onion, peppers, cherry tomatoes. It came out really nice and the next day I chopped up the leftovers and mixed them into homemade mac and cheese. Baked it in the oven with breadcrumbs on top. OMG. So good.

This week I'm making a meal plan from my Fresh 20 cookbook.
Parmesan chicken nuggets and honey glazed carrots Coconut curry style fish with lime coconut rice Korean BBQ short ribs with braised Napa cabbage and rice Pan seared chicken panzanella Baked potato soup with salad
The panzanella and soup are probably things I'd normally pass over, but they were already worked into the grocery list so I'm going with it. I really enjoyed just opening the book and having my meal plan and grocery list already made. I snapped a picture of the page so I had the list in my phone. Easy peasey.
Yesterday on a whim I bought some already prepared fried chicken from the grocery store hot foods section. Guys, did you know fried chicken is effin delish? I haven't had it in a decade at least. My kids just looked at it in wonder and shoved it in their mouths as though it was made of magic and unicorns.
Meatball subs for DH and LO (why is dairy in everything including plain marinara sauce?) -- trying to figure out plan B for me

Make your own marinara! Super easy, just sautee some onions and garlic, dump in a can of crushed tomatoes, throw in some dried oregano and season with pepper and salt, let it simmer for a bit. If you like your marinara sweet, add some tomato paste or a little sugar. If you want to be fancy, add some fresh basil or mushrooms or red wine. You can even be lazy and skip the onions and garlic and just add some garlic powder to the crushed tomatoes. I make it on a weekly basis practically for spaghetti.

I need to start making plain marinara sauce. I usually make my spaghetti sauce and freeze it in meal sized portions, but it starts with sausage and ground beef, so I'll have to adjust it slightly. I was just looking for an easy worknight dinner this week and DH actually helped meal plan by requesting it.
