I make this all the time and freeze it:
Quessadilla Casserole
1 16 oz. can refried beans (I use fat free)
1 8 oz. can tomato sauce
1 tsp. chili powder
1 tsp. onion powder
1 tsp. garlic powder
4 8" tortillas (sometimes I use 6 and just adjust the layering accordingly)
2 c. shredded cheddar or Monterrey jack cheese (I often don't use it all if I'm only doing 4 layers)
In a small bowl, combine all ingredients except tortillas and cheese. Place 1 tortilla in a greased 8" round cake pan (pie plate will work, too). Spread 1/4 of the bean mixture on tortilla. Repeat with 2nd tortilla and bean mixture, sprinkling 1 c. of cheese over bean mixture. Repeat layers with remaining tortillas, bean mixture, and cheese. Bake at 350 for 35 min or until heated through and bubbly. (bake for an hour if going from frozen.)
I've never tried to freeze this one, but it is really good:
3 Cheese Baked Pasta
1 15 oz. container of Ricotta Cheese (may sub. cottage cheese)
2 eggs, beaten
1/4 c. parmesan cheese
1 lb. salad pasta of your choice, cooked and drained
1 26 oz. jar spaghetti sauce
1 c. shredded mozzarella cheese
In a large bowl, combine 1st 3 ingredients. In another bowl, combine pasta and sauce. In 9X13" pan, spoon 1/2 of the pasta mixture; evenly top with cheese mixture, then remaining pasta mixture. sprinkle with mozzarella cheese. Bake at 350 for 30 min.
