We just made our meal plan and shopped today!! We have one meat and one veggie version of each meal when it's easily possible since I'm vegetarian and DH is not. Not an extremely healthy menu this week, but it will do!
Sun: Tacos Mon: Chicken (or soy) Patty Sandwiches Tue: Breakfast Burritos Wed: Sloppy Joes (black bean and meat) Thur: Pierogies and roasted broccoli Fri: Pasta with arriabata sauce & veggies
I tried to come up with 2 meals that use buns so we don't waste a lot. We have a hard time going through a package of buns!
I use thefresh20.com most weeks for meal planning because I was having a hard time like you. It's difficult when working full time! The plan give you 5 meals each week with shopping lists, so there are only 2 other meals that I have to figure out. It's all real food and not processed crap, too. I do substitute ingredients if there is something that I hate, but usually can go to the Facebook page and get a substitution suggestion. You can get a free sample week too if you want to try it out. My other go-to meals are chicken pitas, taco night, grilled chicken salads, beef and broccoli noodle bowls, stir fries are also quick and easy.
We do our meal plan Friday night and then shop early Saturday morning (we've never been big party people so are rarely out late Fridays and I LOVE getting my Saturday morning Starbucks while my husband goes through the check-out)
This Week: Saturday: Chicken Burgers Sunday/ Monday: Pasta Primavera Tuesday: Entree Salad (mixed greens, chicken, pecans, grapefruit) Wednesday/ Thursday: Pork Chops with Mushroom Gravy Friday: Fish and quinoa
I typically do shopping on Sunday's right after church, or else I find I'm too busy and or lazy to do it on a weeknight: Sunday: salisbury steaks and mashed potatoes Monday: cereal and froyo for me, DH works overnight Tuesday: brats and sauerkraut (DH begged for something he can grill since it's supposed to be close to 50 this week!) Wednesday: taco salads Thursday: omlets and cinnamon rolls Friday: fish fry somewhere
I can't meal plan. I'm still too sick to decide ahead of time what I can or can't eat. I keep a ton of fresh fruits and veggies on hand though. I'm always able to keep those down. Everything else is unpredictable.

Tonight: Ribs, potatoes and green beans Monday: Turkey burgers and sweet potato fries Tuesday: Pork chops on the grill, broccoli Wednesday: BBQ chicken, rice and corn Thursday: Grilled kabobs and pitas Friday: Out of town
It is supposed to be in the 40's all week here in Michigan, which means DH wants to grill every night. He loves his grill and I'm totally okay with him cooking

Tonight we are having cereal because that is the only thing I feel like eating. Tomorrow we're having sloppy joes because someone above posted it and it sounds delicious. That's as far as I've gotten. Haha I'm not very good at meal planning. You ladies are impressive!
