It's hard to say without knowing what kind of books you like but below are some of my favorites or those that I sat and read in more or less one sitting because i couldn't put it down. Try not to stress about the flying, download some movies and bring a good book and some trashy magazines and snacks and you will be there before you know it!
The Glass Castle The Help Orphan Train The America Heiress (this is not the best written book ever written, but i got really into the story and read it all in one sitting) The Language of Flowers Shanghai Girls

Wow, did you steal my library?? I love all of these, except I have not read the America heiress. Maybe I should considering our other overlapping interests!
The sookie stackhouse books would be good. Plenty of action and romance and they are pretty quick that I couldn't stop. They get a little boring towards book 8or so. And they are cheap.
The hunger games if you haven't read them. Ready player one is also a good one. I have no idea what you like but it was so good and quick and I couldn't put it down. Maybe start a book before you get on the plane so you are looking forward to reading. I find it hard to start a book on the plane because im not into it yet. But if I am already invested then it is much easier to ignore the distractions.

Have you tried the Throne of Glass series by Sarah J. Maas? It's a fantasy series I've really enjoyed. There are 3 books, so far, with the 4th set to come out this year.
A Modern Witch by Debora Geary. It's a like brain candy series that I have enjoyed when I didn't want to think.
I second Nora Roberts. I liked the Inn Boonsboro series although if mystery is more your style JD Robb's (her pseudonym) in Death series might be better.
The All Souls trilogy by Deborah Harkness. It starts with "A Discovery of Witches" and based on the fact you like HP, ASOIAF, and Twilight you might really enjoy this. All three are out now and I reread the first two and will read all 3 again one day. Love love love them!
I just read girl on a train really quickly. It was good.
I can't wait to get this from the library. I'm down to #489 on the wait list.
I just read it and liked it a lot. Funny story, I was 452 on the waiting list for the ebook and got it two days later. They obviously made a mistake in my favor. Maybe you'll get lucky too.
