in addition to coffee, smoothies, and soup which i think have all been mentioned, mine came with one of those chopper blades and i've used to chop up carrots and onions

Hi, lurker here but I lurve my immersion blender! Yes to all the soups, and I make mayo a few times a month! The trick is having the right container, something tall and narrow, just a little wider than the blender head, and make sure your eggs are room temp.
I've also made mashed sweet potatoes with it, since they don't gum up like regular potatoes.

Those videos make the mayo thing look so damn easy! But mine never worked. I can make it in the blender but doing it right in a jar would be so much easier.
Soup. All the soup. Squash, black bean, tomato...etc.
Ok never made tomato soup but it sounds good.
Tomato soup is one of the main things I use it for. With all the canned tomato options out there (ie, Rotel / jalepeno & onion diced tomatoes, italian seasoned diced tomatos, roasted tomatoes), homemade tomato soup beats storebought every time. Easy, healthy comfort food.
Soak mustard seed 24+ hours in vinegar, add other ingredients (garlic, salt, etc). Cook in more vinegar for 45 minutes or so. Purée everything together with mustard seed powder until you have the right texture (runnier than normal mustard, since it will thicken). Bring it back to a boil (just), stirring constantly, then jar up hot. Let cool.
