Stolen from M15... whatcha eating for lunch and snacks ?
I'm tired of sandwiches and salads. When I eat out though, I eat crap from the drive thru or food court. I had these envisions of cooking and eating these healthy meals during maternity leave and I'm failing.
I'm not much better. I've been eating sandwiches and canned soup/pasta for lunch. Snacks have been an unhealthy variety of chips, crackers, and healthy-ish granola nut bars. I know that making lunches is just going to get trickier as DD gets older and awake more.
I made a huge batch of veggie soup with chick peas and black beans while I was still pregnant and froze it in individual portions. I've been having that or wraps for the last couple weeks. Just went shopping today and got a bunch of sweet potatoes. I was thinking of baked sweet potato with sour cream and black bean corn salsa (from the grocery store deli). I prefer the sweet potatoes cooked in the oven vs the microwave so I will probably cook a few of them tonight so I have them ready for the next few days and don't have to remember to put them in the oven an hour before I want to eat.
Quesadillas may be a good idea as well. You can make a bunch and freeze them. Then you just have to reheat. I'd fill them with roasted veggies, beans and cheese but you could do anything. La tortilla factory makes a good low carb/high fiber wrap that I like to use. It's only 80 calories for the big ones, 50 for the small.
Ooh, a few weeks ago I made a recipe from skinnytaste.com that was really good! I'm mobile and cant link but it was called "avocado, chick pea and quinoa salad." You can keep it in the fridge over several days and just add the avocado to each portion before you eat it. It's served cold so no work at lunch time.

I've been eating leftovers from our dinners. We usually make enough for DH to be able to bring lunch to work and me to get a portion to. Lasagna, soup and pasta sauces are our go-to foods. I've been craving chicken for a while (DH is a vegetarian so I rarely get to eat chicken) so yesterday I bought a whole grilled chicken and made a salad. Yum!
Birdseye steam fresh bags. Usually the ones with pasta & various veggies. Oatmeal. Cereal.
That reminds me of another easy one I've done. I make several servings of brown rice and keep in a Tupperware in the fridge. Birds eye makes a "Japanese vegetable blend." Microwave that and serve over brown rice with soy sauce.
I too have been eating a lot of salads. It does get a little old. I am more of a snacker, so I have been eating dried fruit and fruit and veggies. I have oatmeal daily, which fills my belly. DH made some grilled chicken, which is pretty bland, but tastes good and is incredibly easy to heat up. For the ladies who are on the salad train and want something that is healthy and delicious and is a different twist on salad, I recommend this Avocado and Feta Salad (link below). Its a nice and light flavorful salad, with no lettuce. (Easy to make and store too)
lots of sandwiches. Peanut butter and jelly with a little bag of chips, or a tuna sandwich on an english muffin. Lots of leftovers from dinner. Dinner has been pretty good lately. We are trying to be healthy so we are eating a lot of salads. We either have grilled chicken salad, or taco salad. The taco salad is my fav! To keep it healthy we don't use any taco shells, just veggies and meat. That is dinner tonight!
I am known to frequent the Wendy's drive thru though... crispy chicken sandwiches are my weakness!

I was on an oatmeal kick since I gave birth and have been craving only the unhealthy prepackaged kind. But I've been breaking that habit with flax seed toast and almond butter for breakfast. Lunch is easy stuff like frozen steamfresh veggies or turkey sandwiches or my favorite Amy's organic chili. I am trying to eat pretty "clean" and using my vegetti a ton.
Yogurt parfait. A scoop of regular/vanilla yogurt piled high with fruit - blueberries, peach, clementine slices- and a sprinkle of granola on top. Yum!
I eat smallish amounts all morning. Granola bar while nursing. Oatmeal when he is done. Fruit a bit later. Soup if he is taking a nap. Sandwich or leftovers. I also have apples with peanut butter alot in Lui of the sandwhich.
I mostly eat leftovers. I do make breakfast burritos for lunch and having a bunch of onions and bell peppers prechopped helps since I'm doing oatmeal for breakfast. Since LO doesn't take long naps, I cook and eat when he's having his mat or bouncer chair play time.
I do walk down to the cafe by apartment a couple times a week for lunch and a change of scenery.

Glad you liked it! You should also try the recipe on skinnytaste.com for loaded sweet potatoes. So good! It's a regular for meatless Mondays, around here. The recipe reheats really well for leftovers too!
