For those of us that still need to do some grocery shopping ( this girl right here) or just need some inspiration, what are you cooking for dinner this week?
Monday: Chicken enchiladas Tuesday: Burgers on the grill, green beans, potatoes Wednesday: Jambalaya with turkey sausage and shrimp Thursday: Pork chops with some sides Friday: Steaks on the grill Saturday: out with friends Sunday: Something in the crockpot probably - pork loin or pulled pork probably
Tues: Slow Cooker BBQ Chicken with Ranch Style Beans and Fresh Veggies Wed: Ground Beef Enchilada Casserole made with corn tortillas, cheese, spinach, black beans and avocado Thurs: Pizza Night Fri: Pork or Turkey Tenderloin, Wild Rice and Fresh Veggies
Our kitchen is being remodeled this week!! It already looks so good, the cabinets are all in! But we didn't make a menu or grocery shop. Last night I went to my parent's and my mom made Pasta in white wine and olive sauce. Tonight will be take-out from a new burger place.
Any reports on that chicken-bacon-ranch pasta from last week? I want to know if I should make it!
@pcrunk I run into the same issues. I'm very lucky in that DH doesn't insist on meat for every meal, he's pretty good about eating vegetarian a lot. If we make something extremely meaty, I usually just eat sides like you do. But we try to keep the menu to things that are easily adaptable. Fajitas (or really anything mexican, tacos, burritos), stuffed peppers, any kind of pasta where he can just throw in his meat of choice at the end, a variety of sandwiches (I just omit the meat and add avocado or whatev to make mine veggie). It's a bit of an extra challenge but we make it work!
billyhorrible- Moroccan meatballs sound amazing! Do you have a recipe to share? They could probably be a freezer meal too.
It's a Passover recipe, so you may or may not be interested!
Combine: 1lb ground beef 2-3 cloves garlic, minced egg salt and pepper 1/4 cup matzoh meal (can probably use breadcrumbs, I've only made it during Passover) 1 tsp ground cumin
Roll into balls.
In a saucepan combine: 1/4 cup canola oil salt and pepper 1 tsp ground cumin 1 tsp paprika 1/8 tsp crushed red pepper 1/2 cup water juice of one lemon.
Bring to a boil. Add the meatballs and simmer 20 minutes.

Although this is not my meal plan for the week (I don't normally plan that far ahead!)...does anyone have a turkey burger recipe they want to share? My issue when making them has always been making sure I put enough flavor in there, but also making sure the patties actually stay together and not fall apart. The "staying together" has been the bigger issue...any recipes or tricks are much appreciated!
I usually buy organic, frozen ones from Whole Foods. I thaw them out for several hours in the fridge, and for the last hour or so, I marinate them in a bbq sauce. Due to the weather, I've been cooking them in the oven. I top mine with a tomato and avocado- yum!

We always add chopped spinach to ours, makes them really light.

Pimento cheese is my favorite, but you cannot find the pre-made kind that comes in a container in MA. When I go home to TX, I seriously eat a pimento cheese sandwich every day. Do you make yours homemade? I've tried,but it never tastes like it should. I'm craving one now!!

They have a really good mail order system and will ship to anywhere in the US but it probably costs an arm and a leg.
