Forgive me if someone was already doing this, just thought I'd jump on the ideas in the Monday, Monday thread and start a meal plan post. I was thinking Monday's, for the week through Sunday? Or however many you want to post? On one of my old boards we did our meal plan with a recipe of link to one, for one of the meals. Just a fun side idea.
I don't really have a great recipe for this week, so I'll just post my method for cooking pot roast.
Monday- Cheeseburgers, broccoli cheese rice, corn Tuesday- Taco Tuesday! Wednesday- Pulled Chicken (premade), if anyone has an easy recipe for this, I'd love it!
Thursday- Pot Roast Wash and Slice in half about 10-15 baby red potatoes, 2 onions, and a handful or two of baby carrots. Place potatoes and carrots in crockpot and half of the onions. Pour in 2 cups of water. Season with salt, pepper and garlic powder. Place roast on top of veggies, add more onions around roast and season well with more salt, pepper and garlic powder. Cover crockpot on cook on low for 8-10 hours. Delicious! When I was working I'd prep all of this the night before and just put it in the crockpot in the morning, but the last couple of times since I've been home, I just do it in the morning. Side note, if you do prep it the night before, I've read to let the crock sit out of the fridge but not turned on for about a half hour, so it doesn't crack going from cold to warm so quickly. I always followed this rule and haven't had a problem.
Friday- Chicken Stir Fry Saturday- Spaghetti with chicken italian sausage
@mommatotwo, I have a crock pot recipe for a BBQ shredded chicken - I know some regions seem to refer to pulled chicken as any flavor in pulled form while others seem to refer to a particular type of seasoning for "pulled chicken" and use qualifiers such as "BBQ" in the names of any other flavor, so not sure where you land. The cooking it is easy, but shredding it (while not difficult) can take a bit, especially if you are making a bigger batch for a larger family or to freeze leftovers. I have heard of people shredding it by just putting it in a stand mixer, letting the paddle basically break it all apart, but I haven't tried it yet; if it does actually do the job, it would save a lot of effort. Let me know if you are interested in that recipe.

I will edit this response tomorrow to include the recipe as it is in my kitchen and I am not. Because I was/am responding to other posts, it would have felt rude to not acknowledge here (I am an over-thinker though, so this is probably unnecessary, but oh well).
ETA: The recipe as promised...
@mommatotwo, the recipe I have doesn't say how much chicken to use. I use however much I feel like for the given time, then just use the amounts of liquids as a rough ratio, using however much I need to get a decent coverage of the chicken.
chicken breasts
18-oz bottle of BBQ sauce
1 bottle of beer
paprika
salt
pepper
onion powder
garlic powder
bread/buns for making into sandwiched
Sprinkle a bit of each seasoning on each side of each breast, and set into a crock pot. Use the rough ratio of one bottle of BBQ sauce to one bottle of beer until you get a decent coverage of the chicken (fine to still see the chicken on the top, but make sure it is coated by the liquids at least - if that isn't clear, I can provide a visual)(for a small batch, I often use about half to 3/4 a bottle of each, then later serve MH the leftover beer so I can pretend to be a "dutiful wife" and make him side-eye me with suspicion until he realizes why I am actually bringing him beer; lol - I'm not a beer fan). Cook on high for roughly 4 hours or low on for 8 hours. When 30 minutes remains, remove the chicken, shred with two forks (or try the mixer if you want - please report back if you try that), and return to the crock pot to finish.
As a random side note: As I was typing the sentence saying how long to cook it, the song playing at that exact moment was at the line "I hope your chicken's raw inside, and I hope your bun is stale." Though I of course do not share those sentiments, I thought it was funny timing - I am easily amused.
