Tonight we are having breaded parmesan chicken and green beans. The only thing we have in the freezer right now is chicken. I have to go grocery shopping and meal plan, but won't get to until Wednesday because DH will have my car tomorrow while his is at the shop getting any oil change.

Tonight: carnitas tacos, corn Tomorrow: green chili chicken enchiladas and a margarita for Cinco de Mayo Wednesday: Italian sausages with peppers and onions, salad Thursday: potstickers, chicken teriyaki stir fry Friday: DH & DD are on their own; I'm having dinner out with a friend. Saturday: BBQ for our friend's birthday

forevermorgan I have never made it before but I do believe that's the one I have! my husband is a little hesitant about it. DD is only 14 months so she will eat just aboit anything haha
Tonight we had turkey melts. Haven't decided order because LO has been having a rough time lately, so we are playing it by ear with some "backup meals" in the plan for the week. In no particular order: a chicken stir fry over fried brown rice; curry chicken and brown rice; sauteed summer sausage with cheesy hash brown bake, grab-your-own raw veggies and/or fruit; and veggie red and white sauce over cheese-stuffed ravioli. Saturday is brats, onions, and loaded potato slices all on the grill. Sunday is turkey jambalaya if we are even hungry for supper. I'm always open to sharing recipes, but they are rarely online ones, so I go with a "provide upon request policy" since I often can't just link.

Late to the party but I'll share
I went to the grocery store yesterday and made the mistake of not meal planning before I went; why would I do that? I know I spend more money when I'm just picking stuff up, and when I got home I realized I forgot one thing to make a meal I was thinking of... Oh well Plus I need to stretch these groceries until Wednesday of next week. I am trying to move my shopping day to coincide with the local farmer's market where I am going to be picking up my CSA box all summer!
Mon: Steaks, Baked Potato and Salad Tues: Spicy Pulled Chicken Nachos (This was supposed to be something else but I forgot tortillas) Wed: Pizza Cresent Rolls Thurs: Grilled Shrimp Skewers, Grilled Potato Pouch, Steamed Veggies Fri: Spicy Sausage Spaghetti with Salad Mon: Grilled Chicken, Corn, Macaroni and Cheese, and Baked Beans Tues: Pizza Cresent Rolls
So Pizza Cresent Rolls appear on my meal plan usually once per week. Some weeks I won't buy the ingredients just to give us a break, but they are so easy, quick, yummy, and cheap! They help to stretch my grocery budget and satisfy my DH'S need for meat with every meal (which is expensive!)
Cresent Rolls Pepperoni Motzarella (String Cheese or Fresh) Butter Garlic Powder Italian Seasoning
You get the idea; put ingredients inside cresent roll, wrap and bake normally!
Also, please keep doing this thread I love seeing everyone's ideas and it motivates me to meal plan!
Eta: We eat out on the weekends. I usually do Southern breakfast around brunchtime and then out to eat for early dinner bc of LO.
Tuesday: Mussels (yikes!!) in garlic-(not)butter sauce with homemade bread and salad. Wish me luck with this one. DH was raised on the east coast, so he knows good seafood. I've eaten mussels twice in my life and never cooked them myself. This will be interesting...
Wednesday: Maybe leftover freezer meal for DH, and I'll scour the cabinets for something I can eat. DH has a busy evening, so he has to eat and run.
Thursday: Cilantro-Lime chicken salad
Friday: leftovers for DH, I have a ladies' dinner at church.
Saturday: leftovers or breakfast for dinner...or something else entirely. Hoping to get back into the Friday grocery shopping habit.
Sunday: breakfast food.
This week is busy and we have family in town that may or may not affect dinner plans, so it's a little less structured than normal.
Thursday- pancakes or waffles. It's been really hard for me to plan meals between not knowing what I want and trying to avoid foods that will trigger my god awful heartburn.

The Nachos are so easy and you can adjust the spice factor!
I put 3 chicken breasts in the crockpot along with salt, pepper, one can of tomato sauce, one onion sliced, and the spice of your choice. (You can add salsa, Sriracha, cayenne pepper, chili powder, as much or as little as you like.)
Cook on low for 4-5 hours. I use the beaters on my hand mixer on low to pull the chicken apart; it works so well!
You can add this to your chips and melt cheese on top under the broiler and add toppings, or last night I turned it into a dip.
I drained the pulled chicken and then added: 1/2 c salsa 2 c sour cream 4 c shredded cheese
It melted in the crockpot and was absolutely delicious! Plus only one pot to clean up

Sounds similar to mine. I usually use diced chicken breasts and sauté them because I am terrible at starting the crock pot on time, but the crock pot works well too when I remember. I use homemade taco seasoning and salsa on the chicken with diced onion and bell peppers. So easy and so versatile - I use that as a basis for a handful of meals: Throw on a tortilla with lettuce, cheese, tomato, sour cream, whatever. On chips and lettuce then topped with tomato, cheese, sour cream - sort of a cross between a taco salad and nachos. In a taco shell with the other toppings also. You name it.
The crescent pizzas are good too. We do similar ones, then use pizza sauce for dipping them in.
I'm new to SAHP and just found this thread. I would really enjoy joining in on this fun. I really like meal planning and seeing what everyone else is making. I feel it forces me to be creative and change things up a bit. Can't wait to contribute next time.
