I really need some inspiration for new dinners. Lately all we eat are the same old things.. Please post some of your favorite recipes! Bonus points for pictures!
I posted this in TB before. It is seriously dummy-proof. My mom made it today and she rarely cooks. If she can do it, anyone can. Also, it is clean eating and delicious! One of DHs all time favorites happens to be the easiest thing to make.
No Peak Chicken Dump 1 box Uncle Ben's Long Grain wild rice with seasonings in 9X13 pan. Use 1 can cream of mushroom soup, 1 can cream of chicken soup, and 1 can water. Mix it all up until it's blended in the pan. Place FROZEN boneless chicken breasts on top of the rice mixture, and sprinkle 1 bag of Lipton dry onion soup on top. Cover and bake at 350 for 2 hours.
If you like spicy, we make this vinaigrette and put it on grilled chicken, pork or fish. We use jalapeños instead of serranos. Also, I just char the peppers in the broiler instead of the grill.

I just made pulled pork tonight and it was super easy. Put a layer of onions in the bottom of your crock pot and a pork loin roast seasoned with salt, pepper, chili powder, paprika, cumin, garlic powder, onion powder and basically whatever else you want on top and cook on low for 6-8 hours. It just falls apart and is delicious. We had it on cauliflower tortillas, but it would be amazing on King's Hawaiian buns!
I have two. A quick one and a longer but delish one!
The quick is just a chicken breast for each individual. Sauté onions and mushrooms together until tender. Cut a little pocket into your breast (I googled how to do this technique) then stuff the onion, mushrooms, and Swiss cheese inside. I wrap ours in bacon but you could coat the chicken in breadcrumbs too. Then, you just bake! I serve this with Rice Roni (sp?) wild rice.
