I'm not sure how to meal plan without lots of carbs :/ LoL I'm sure it will get easier when I start getting my produce box every week! Off to Pinterest for some ideas
The plan is pretty rough at this point because it depends how I feel (I am pretty sure I am at the beginning of a sinus infection), but here goes:
M: mozzarella tomato meatloaf; if I manage to get to the store for groceries (including potatoes), I'll make loaded sliced potatoes or garlic mashed potatoes, otherwise maybe just some sweet corn or something T: teriyaki chicken stir fry over fried brown rice W: hearty pork chops; garlic mashed potatoes; tossed salad Th: ? ? ? F: ? ? ? Sa: brats; loaded sliced potatoes Su: ? ? ?
I grocery shop on weekends. The day depends on when I get the meal planning done based on what's on sale. Also, my "house salad" is green leaf and red leaf lettuce, mozzarella cubes, avocado, bell pepper (not green), and grape tomatoes, dressing is a vinaigrette. This week, it's a pomegranate vinaigrette. Sunday: Pot roast in the crock pot, glazed carrots Monday: Skillet lasagna (meatless Monday) Tuesday: Turkey tacos (Taco Tuesday) Wednesday: Shepherds pie (using leftover pot roast), house salad Thursday: Cheeseburgers with peppered bacon (for DH), avocado, and caramelized onions; house salad Friday: Roasted whole chicken (lemon herb), cream cheese polenta, house salad. Saturday: leftovers most likely
Monday: french onion soup and green beans with ham (the soup was Amazing!) Tuesday: Chicken and Doritos casserole. Wednesday: Spaghetti Thursday: Korean beef and rice Friday:? Saturday:? Sunday:?

Hey gals, its been a busy start to the week! DD1 is getting over strep and I had a bunch of Dr spots today, so I'm feeling tired and uncreative lol.
Meal plan- Mon we had fish n chips Tue- tacos Wed - chicken stir fry Thursday- something easy, dh has a work thing, probably breakfast for dinner or hot dogs or grilled cheese and soup. Friday-spaghetti Sat -brats
@mommatotwo My DH loves to grill, which makes meal prep and clean up much easier on me for about 8 months of the year; I love that he is a good cook
I love using the grill. Makes clean up so easy. MH put ours in the garage last fall, then put a bunch of stuff in front of it. Every time he is at the house, I try to convince him to dig it out, but he says it isn't worth it. The next time he is at home, I plan to marinade steaks in hopes that they will entice him to dig it out (brats and burgers did not work, so I had to use the grill-type pan on the range). I would do it, but of course there is a few really large, heavy items that need to be moved that my messed up hand can't handle.
Sounds delish! I am also trying to do less carb-heavy meals.
For me it's a huge change, especially for snacks. The meals are good, I enjoy all of the veggies and experimenting with new things, but I am still working on something carb like and sweet to snack on. Just made brownies out of eggs, butter, unsweetened cocoa powder, dark chocolate, ground flax seeds, vanilla, salt, baking powder, and a little real maple syrup. The batter tasted pretty good, we will see what DH thinks. Trying not to have any processed foods or sugar that isn't natural.
