I am behind this week and have no ideas for this week! Let's see what you all have bonus points for chicken recipes because I have about 10 lbs in the freezer.
All I have is tonight: grilled chicken with a vegetable and baked potato.
younglove316, I love grilling this time of year, so lots of different flavors for the chicken gives some variety to grill it more than once in a week if you want. Other go-to recipes for chicken are stir fries, chicken and rice, curry chicken and rice, diced into my spaghetti sauce instead of ground meat to mix things up (I used my same sauce for spaghetti, lasagna, pasta bakes, stuffed red bell peppers, or half of my red and white sauce - a mix of it and alfredo sauce - for over cheese filled ravioli or regular pasta), pasta primavera, spicy Italian pasta (doesn't have to he spicy), etc.
Now for my actual meal plan this week which is actually pretty pathetic - LO has been intense lately and I have a million things to do (after typing the word "million" my tablet suggested the word "dollars" - wish I could type "I have a million dollars" so meals are super simple and quick this week.
M: beef tips over pasta T: grilled turkey melt, apple, tossed salad W: summer sausage, tossed salad, something else TBD Th: BLT, tossed salad F: tuna casserole Sa: jambalaya Su: beef tips over pasta (yes, again - not even leftovers) M (because already planned since long weekend): burgers, brats, hotdogs, taco dip with chips, melon if the store has nice looking ones

Tonight: Beer cheese soup with bacon and red bell peppers Tuesday: Noodleless lasagna (low carb) Wednesday: Baked chicken thighs (thinking honey soy glaze) with green beans Thursday: I'm in 3rd trimester with twins and by Thursday I'll probably be doing take out the rest of the week !
Last night: "chicken melt" (leftover roasted chicken and mozzarella), homemade creamy tomato soup Tonight: Beef fajitas Wednesday: BBQ shredded chicken sandwiches, house salad Thursday: Steak, baked potato, a veggie of some sort Friday: Pasta in cream sauce with shrimp and zucchini
I completely forgot about this weekend so I'm going to plan for that this afternoon.
Super late to the party also! It's been so crazy the last few weeks with lots of end of the year stuff at DD1's school.
Mon- We had burgers No we didn't LOL- We had Chicken Stir Fry!
Tue- Easy Chicken Parm (I buy the frozen raw breaded chicken tenders and cook them as directed, then I put in a glass dish, cover with marinara, split a few peices of string cheese over the top of each chicken tender, and sprinkle Parmesan over the whole thing. Cover with foil, and bake for 20-30 minutes at 350 to warm the sauce/melt the cheese). I serve with spaghetti noodles. YUM.
