NCDR Dairy free cooking question...

Does anyone here read Pioneer Woman?  She posted a butterscotch pudding today, and it looks sooooo good (http://thepioneerwoman.com/cooking/).  So my questions are:

1) Would this work with coconut milk instead of whole milk? 
2) What is the point of the butter?  Flavor or texture?  Can I leave that out?  Or swap it with coconut oil?
3) If I use coconut milk and coconut butter, is that going to totally ruin the butterscotch flavor?  Am I going to have coconut pudding instead?  If so... could I just add in cocoa powder and call it chocolate pudding?
4) Who else is making this TODAY?

I think the butter is for taste, if not both. Could you use rice milk so it wouldn't add too much coconut flavor?

I'm sure maple will come in and be more useful!

Also, looking at the recipe she said she used 2% milk instead of whole, and it looks like she used more egg yolks than 4 (I see at least 5). Would that be a substitute to make up for the lack of fat in the milk?

I don't do a lot of substitutions, so I was just curious.

I haven't made that recipe before but I've made pudding plenty of times and it's just milk thickened with cort starch plus flavoring. I think coconut milk would work fine and I would probably try it with no coconut oil, but more fat does tend to make things delicious.

I think coconut milk should work fine. I actually tried a homemade pudding recipe with it and it worked, but was chocolate. It's actually very similar to this recipe so I don't see why it wouldn't work. The brown sugar is what gives you the butterscotch taste. You'll probably get a little coconut flavor coming through, but maybe not.

I used Earth Balance in place of butter. Can you do that? Otherwise I'd just skip it entirely.

I'm trying to see if I can make this without going to the store, so that's a no on rice milk and a no on earth balance. I suppose I can make it without any coconut oil, taste it, then add coconut oil if I think it's missing something.

Also, regarding the extra egg yolks, she could have done that as a sub, but she is also known for making larger batches than she calls for in the recipe, though she usually calls herself out when she does it.

Butterscotch Flavor = Brown Sugar + Butter

The coconut subs will work fine, but it will taste more like coconut than butterscotch. Do you have a margarine that you use? I'd use that instead of butter.

Don't use rice milk, it won't set. You need a thicker consistently.

Just use coconut oil and coconut milk and call it coconut pudding.  That sounds delicious.

I make chocolate oudding with smitten kitchens recipe all the time. I just made a batch with cashew milk and put it in the fridge. It's super easy and it sets because there's a quarter cup of corn starch in it so I think any milk sub would work fine.

Also coconut pudding (with canned milk) is a thing so I'm sure there are lots of recipes out there for that.

I made some really good pumpkin pudding at thanksgiving with coconut milk. Mine didn't have eggs or anything though.
I do t know what that has to do with anything other than I don't see why it wouldn't work.

I don't know myself, but in her recipe intro she says her normal chocolate pudding recipe is this + chocolate with white sugar instead of brown.

Also, chickypoo2468 good to know about the rice milk, I've never used it for baking so I wasn't sure. I just make my (mildly) lactose intolerant husband deal with dairy if he wants to eat my food, which he does

Pretty much. Just use white sugar instead. See the link I posted before. That's basically what it is....

Let us know how it turns out.

I would still use brown sugar for chocolate pudding. It would be richer and more caramely.

Or she chucks in another stick of butter or a pound more bacon because it tastes better

Oh hell y'all! It's sooooo good! I added 1/4 cup butter scotch schnapps just to kick up the butterscotchness. And it's so good!!!
I put half in bowls, then added Cocoa to the other half. But honestly the plain is better. Don't tell sak I said that.
