Hubby is making homemade chicken bacon ranch sandwiches tonight-they are the bomb. I made a batch of pasta salad earlier because I love it and it's super easy to grab a bowl and be full for a little bit we also have taco salad on the menu for sometime this week.
Hubby is making a seafood and pasta dish for tonight. Tomorrow night is a whole chicken roaster that will be made on the smoker (or the oven, all depends on when we get back from our morning walk in the city with a few friends). Last night we had take out from a local bbq place.
I just had sweet chicken teriyaki with rice for lunch. Defrosting a couple frozen meals that I previously made, so I have tex-mex chicken, chicken tortilla soup, and potato soup lined up for the next few meals. Most likely pasta for dinner tonight though.
We've been HORRIBLE about cooking dinner. We usually just grab something quick. I did get a bunch of sandwich stuff at the store, so breakfasts and lunches are healthy and good.

Going out for dinner tonight, but last night I made sloppy joes and salad with corn, olives, salsa, and tortilla strips. They were delish! My husband wasn't sure if he'd ever had sloppy joe's before and was obsessed.
I think I'm making chicken enchiladas tonight. Currently perusing Pinterest for variations on the ones I usually make. Maybe I can just convince DH that we should go on a date for Mexican. I need spicy.

Tonight we're taking the boys to a kiddie concert, so we're picnicking. Defrosting some pulled pork which we'll turn into sandwiches, and some leftover coleslaw and potato salad from the bris, and oranges from our tree.
Tomorrow we'll probably have leftover chicken paprikesh or lasagna my friend brought over.
Saturday my friends are coming over for a belated birthday party for me and bringing dinner. Sunday we'll go out for Father's Day.
Still on tap: our freezer still has chicken noodle soup, brisket, and spicy chicken.

We are just about out of the stuff we bought for the first 2 weeks! Last night was steak, asparagus and garlic roasted red potatoes. Tonight its turkey tacos and tomorrow chicken alfredo.
kemdupuis yum, warm bruschetta sounds like a great idea. Any recipes or tips?
I don't really use recipes, but here's what I do: sauté a bell pepper and a few medium sized onions in a bit of EVOO until they begin to soften/caramelize (however far you want to take it), toss in a few minced cloves of garlic and cook it for a minute or two more. Dice 7-8 plum tomatoes (or whatever kind you have) and toss those in the pan until they're heated through/starting to release some liquid. Season with salt, pepper, Italian seasonings, onion/garlic powder... whatever you feel like. I slice up a baguette (or some other crusty white bread), and briefly pan fry the discs in butter. Put the bruschetta on top of the bread. Top with a bit of Parmesan or Gruyere cheese (I def. prefer the Gruyere because it is slightly nutty). And that's it! Super easy, but SO good!
ETA: sometimes if I am feeling fancy, I'll dice up some eggplant or zuchinni and toss that in with the peppers and onions

Hmm I think I'll be making sloppy joes one day next week!
Gravy steaks, mashed potatoes and green beans courtesy of my parents that are in town. Props to women with outside babies cooking full meals. I've got a freezer full of meals that I plan to use once family leaves.

Been doing all my cooking between 1-4 am everyday. For tomorrow's dinner I made cinnamon noodle kugel and I also made enchiladas to freeze for after baby. I figure when I can't sleep at night I'll cook next day's dinner and a freezer meal. Also I've been baking.
We started getting our farm share last week, so we have ALL THE VEGGIES. It's a bit overwhelming.
This week's menu was:
(M) Bean Fajitas: onion, kidney beans and adobo, jalapeno cheese, salsa, butter lettuce, avocado and lime (T) Take out pizza (W) Peach&pickle romaine salad with balsamic, broiled kale, potatoes and garlic scapes with nooch, toast with flax butter (Th) Peanut soy lettuce wraps with carrots, turmeric rice and lime (F) no clue because I've been having contractions all night/morning and I can't think straight (!!!!!!) But probable miso soup with bok choy, roasted mustard greens and snap peas
