Baby Breakfast

So I have done a combo of baby food and baby lead weaning with my daughter. At daycare they have cubes of frozen puree that I make and they also give her whatever is on the menu for the rest of the kids for lunch. They think I'm kind of nuts bc I use cloth diapers and I never gave V rice cereal and I am kind of anti processed carbs if i can help it. Don't get me wrong. I enjoy that kind of stuff but I think it's more of a treat than an every day thing. So now they are asking me to bring in more "breakfast" type foods that V can eat with her hands bc the next class she will go to doesn't spoon feed/tries to minimize it. I recently started bringing in steel cut oatmeal with fruit (before they told me this am it needs to be finger foods) which is similar to what I eat and about as carby as I want to get. Now that isn't going to work and I don't want to bring in toast, waffles or pancakes which is what I see most of the other babies eating. Every once in a while is fine but not every day. I have a crazy sweet tooth and issues with eating sweets even when I'm not hungry and even when I know better and I just don't want to start my daughter out that way as well. So long story short. Any suggestions as to what baby finger foods I can feed her? I know I can do cut up fruit but I'd like her to get some protein and veggies as well.
