Ours offers cooking, Spanish, computers, music, ballet, and gymnastics. The age of eligibility differs for each. I thought gymnastics would be a good idea because D is so active already, but I am not 100% sure how he would do with the older kids and structure at this stage. I think it will become more important as he gets into older classrooms that are more preacademic and less play focused. (It is also kind of expensive.)

For the toddlers (1.5-3yrs), they only just started offering anything. It's a music class. It was going to be optional, but then it turned into - well, all the other kids are doing it, we don't want anyone to be left out ... so please pay us more money!
Despite being shanghaied into it, it's definitely been worth it. LO has always been into singing songs, and it's adorable to hear him break out into new and different songs. So it does seem like he's getting something out of it.
The rest of the "activities" - spanish, soccer, more music classes, probably some other sport, don't start until 3 in the older kids' classroom. I'm not sure what we'll try out. Maybe something like soccer because I know he loves kicking a ball around, but at the same time, we already are spending far too much money on daycare, so it really depends on finances when the time comes.
For us it would depend on the additional cost. I would probably try one of the choices to start before commiting to all of them. Dh would be all about baseball for E!
I have friends who do a martial art thing through daycare and they rave about how much thier LO loves it and what he gets out of it. he started at this age too.

We have outside organizations that come in to do music (starting when they move into the toddler room), soccer, basketball, and drama (they start at 2.5). DS does music, soccer, and basketball. He has learned so much about rhythm and musical instruments in music. His soccer helped him with some basic drills and basketball has really helped him, but that may be because he's not yet old enough for rec basketball. DD does music now and will most likely do soccer too. We will wait on basketball as it requires more coordination than she will have in 6 months.
Music is $54 for a 12 week session. Both soccer and basketball are $80 for an 8 week session. So I basically pay $30 a week extra for these things.
As far as I know, neither DD's old daycare nor the one we want to enroll her in the fall offer extras. However, if the prices are reasonable I'd probably take advantage of it. Maybe just one at a time.
We're part of a home daycare. They don't offer extras like this. If it was something like a special trip somewhere, we'd definitely pay. But for activities, at this age, I don't think we would pay for more than maybe one. She doesn't have the attention span and I am not sure she'd get anything out of it.
They have a "fun bus" that comes once/week and is basically a little gym in a schoolbus. We've decided not to do it until B asks (and even then the answer might just be no). They have done some free sessions and he does talk about it and likes it.
The older classes have add-on dance that I know of. I'm not sure what else is offered, but I have a hard time justifying paying even more during daycare hours.
Our daycare center doesn't have any of these extras. There's a music program that's already included and there are lots of other extra activities, but they don't start until the kids get older. I feel like B already gets a great variety of activities in his classroom and I don't think I'd necessarily pay for any extras right now.
