Hi ladies. Does anyone know of a good way to make a creamy dairy free pasta sauce? Prior to being dairy free I would use all the butter and cream I could get my hands on to make pasta sauces. I want to make a cream sauce to go with some wild rice and cranberry sausage and pasta tonight. Has anyone done this successfully? Has anyone just used almond milk? Any ideas would be greatly appreciated!

Good question! I have been craving creamy sauces for two months now. I remember seeing a soy and dairy-free recipe for Mac by cheese somewhere. Lemme see if I can find it.
I made a dairy free creamy salad dressing using full-fat canned coconut milk that turned out great. I've also made a few sauces using almond milk with a thickening agent but wasn't as successful. I think the fat from the canned milk helped with the creamy factor so I'd suggest that route.
Thanks all for the suggestions. noname, I'm going to have to try using canned coconut milk next time. We ended up using almond milk, coconut oil, and olive oil with some flour to thicken it up. It was okay. I think the main problem is that nothing really compares to to full fat buttery creamy sauce. We also bought some cauliflower. I think we might try to make a sauce with that sometime soon.
I finally tried making a sauce with cauliflower tonight. We didn't follow this recipe exactly, but something very similar. It turned out super delicious! Had it with sautéed shrimp and pasta.
