Let's compile up some good ones? I have to go grocery shopping later. I have to incorporate some grains in my diet. We don't do rice- mainly because it takes so long to make lol. So any good go to quinoa recipes??
Typical dinners here are giant salads with whatever veggies we have in the house and a lean protein. I like a light homemade Dijon vinaigrette.
We just got a grill and only used it once or twice- any good marinades for chicken that grills well?
We eat fish a ton too, but mostly salmon. Any other fish you like to make?
I think I left this in our last recipe thread, but it's my favorite and it's delicious AND it's healthy! I was planning on making this week. Tilapia filets Season with salt and pepper and dredge in flour Heat a small amount of oil in a pan over medium-high heat Cook the filets about 2 min per side and set them aside Turn down the heat Add 1 1/2 T butter and when it gets foamy add 1 1/2 t sage. Turn off the heat Add 2 peeled and segmented grapefruits Drizzle the filets with the butter grapefruit sauce and serve with brown rice (or quinoa). Mmmm

Around here baked salmon with pesto goes over well, as does lemon/dill/butter baked salmon. We get red snapper fillets and I have an onion/garlic/olives/caper/tomato sauce to cook with. Would probably work for cod as well as any solid white fish.

Whoa, sounds delicious and I never thought of orange as a citrus for chicken!
I just made a quinoa bowl, which is so broad but is usually just quinoa mixed with veggies. Today was sweet chicken sausage, eggplant, leftover potato and corn, green beans, onion and garlic sautéed with some crushed red pepper and canned tomatoes then mixed with some quinoa cooked with chicken broth.
It was good. But made it spicier than I normally make. And I gave some to liam. He liked it surprisingly. I guess I won't have a picky eater on my hand.
This is one of my favorite quinoa recipes. I make it as a side for dinner and then bring leftovers for lunch. I've added different veggies and black beans based on what I have and it's always good
