One of our faves would be black bean, quinoa burritos! They have cheese and sour cream in them but you could do a cheese substitute and skip the sour cream if you wanted. You make them in a pan to crisp them up. Oh snap. To die for. In fact I WANT these right now.
this vegan broccoli soup is amazing and i could have 5 bowls with no guilt even though it has a super creamy flavor. it seriously rivals panera. we eat vegan about 85% of the time.
I'm pescatarian and my current favorite recipe source is this Moosewood cookbook. Everything I've made from it has been amazing.
Some of my other favorite recipes these days that would be easily adaptable to vegan are: Crockpot pot pie Crockpot sloppy lentils Peanut noodles Roasted cauliflower pasta Grilled portobello sandwiches Moroccan sweet potato curry

We eat a lot of vegan meals. My favorite is Happy Herbivore recipes. She has a menu plan program for $20 per month that gives you a whole week (at a time) of vegan meals, recipes, and a shopping list. Then she breaks it down so its easy to pre-make mostly everything in one day. We print out the plan, choose a couple recipes for the week, and eat those. We don't do the whole plan. Then I save all the weeks in a binder, so I can reuse them.

This is not meatless but could easily become Meatless! Minus the ground turkey and add in more beans or some rice or maybe another sweet potato... I made it today for dinner, can't wait to chow down.

Veggie here. Check out the freezer section of Trader Joes for quick and easy meals/bases that you can spruce up into something more. Also, gas prices have been so low that it's driven the cost of produce down, so check out your local farmer's market!
