Yesterday was Panda Express Tonight is pork and pineapple kabobs, and some undetermined side dish...leftovers tomorrow Thursday is shredded bbq chicken sliders and vegetables...leftovers Friday There is a festival this weekend in my parent's town, so we will most likely eat there saturday, otherwise it will be pizza or something

Those of you that cook lamb- any good recipes? My in laws just bought 2 lambs at the fair.
I love lamb!
Roast: Rub olive oil over leg of lamb and place on a rack set in a shallow baking pan. Season lamb with salt and pepper. Cut 10-12 slits in lamb and slide slivers of garlic into the slits. Place lamb on rack and roast for 1 1/2 hours at 350.
Grilled: Combine olive oil, salt, pepper, garlic and rosemary in a bowl. Rub all over a butterflied leg of lamb. Cover and let stand for 2-3 hours. Grill 15 minutes per side. Slice across the grain.
Shanks: Brown shanks in olive oil over medium heat. Remove shanks from pan and throw in some chopped carrots, onion, and garlic and cook for about 10 minutes. Add some ground cardamom and a cinnamon stick and cook for another minute. Stir in 1/2 cup pomegranate molasses and 1 cup of boiling water. Place lamb shanks in a baking dish. Pour the vegetables and liquid over the shanks. Cover the dish with foil and bake for 90 minutes at 350.
Ground: Shepherd's Pie or moussaka
Chops: season with salt and pepper and broil 4 minutes per side.
I also have a great recipe for Moroccan lamb tangine with prunes and almonds, but it's a little more involved.

If you like Indian style food, lamb passanda is lovely. Its a really creamy, almondy curry that makes the lamb melt in your mouth. Any curry in fact with lamb is usually pretty good if cooked low and slow enough. Oh god i love lamb, we dont get it nearly enough here.

No worries, I should have put an explanation since it is regional. They are like bite-sized dumplings usually in a cream soup or with sauerkraut and sausage (or ham) in a cream sauce. Certainly a comfort food!

Monday- leftovers from DD's christening Tuesday- rice crispie ranch chicken and mashed potatoes Wednesday- hamburgers on the grill, Mac n cheese, grilled corn on the cob Thursday- Mango habanero chicken, garlic Parmesan green beans, and smashed red potatoes Friday- Applebee's (meeting girlfriends, DH is going to a Sox game so his dinner will probably be beer and a hotdog;)) Saturday- undecided. We might meet up with the IL's

Since we actually made a meal plan this week (and hopefully we'll continue it ) I'll join!
Mon: Pad Thai and sautéed veggies Tues: Rice and ground pork burritos (SIL gets a little creative with meals) with a big salad Wed: I'm working so I'll be having whatever my nanny kid is having, probably pasta of some sort with veggies Thurs: Grilled chicken salad Fri: Leftovers or go out Sat: BBQ up at my mom's Sun: No idea, maybe pizza!

It really was...and because I can never finish a whole steak i have half of it for lunch that I put over a salad, that consists of lettuce, cherry tomatoes, Gorbanzo beans, and croutons with a little bit of Italian dressing.
Would love a good spinach quiche recipe if you have one!
We have a lot of Swiss chard in our garden so can you substitute chard for spinach?
You can definitely sub chard in for spinach. I use frozen spinach to skip a step, but if you're using fresh chard just blanch it first. This is a pretty basic recipe - saute a chopped onion and 3 minced cloves of garlic in oil. Add a chopped serrano pepper (I de-seed mine so it's not terribly spicy), spinach, salt and pepper. Cook for a minute or two, then let cool slightly. Beat 4 eggs in a bowl, add 1 cup mozzarella. Place spinach mixture into your pie crust, then pour egg mixture over. Top with another cup of mozzarella. Bake at 350 for 20 minutes.
