This is my favorite go-to, weeknight meal. You can do whatever variations you want too - regular sausage instead of chicken sausage, spinach instead of escarole, rotini instead of penne. The possibilities are endless!
I make "Korean beef" nearly once a week, it's definitely our favorite meal that I make and SO easy.
1 lb (I always get a tiny bit more because we're pigs) ground beef 2 tbs sesame oil 2 cloves garlic minced 2 ts fresh ginger (I buy it in a tube already ground up) 1/4 cup soy sauce 1/2 cup brown sugar Crushed red pepper flakes (I shake a ton into mine because we love spicy stuff) Rice Broccoli (Optional) Green onions
Cook the ground beef with the garlic and sesame oil, drain and return to pan. Add the soy sauce, brown sugar, ginger, and red pepper flakes. Let sit for a few minutes. Serve over rice with broccoli on the side.
I also love this one pot pasta dish link It's quick and easy and seriously only one pot, which DH is always super excited about.

And this is the.best.meatloaf. I'm not even kidding. I DON'T generally like meatloaf but I LOVE this recipe. The sauce totally makes it. We had it last night for dinner and my SO swears it's his favorite thing that I make. www.pipandebby.com/pip-ebby/2014/2/22/best-ever-meatloaf.html
I make a "Greek" salad that goes over really well. The leftovers are even better the next day.
2 boxes of couscous. Whatever flavor you like. 2 large cucumbers. 1 pint each of red and yellow cherry tomatoes. 1 16 oz. container of feta. 1 bunch of cilantro. 1 can of black beans. 1 bottle of Greek dressing. Ok to sub in Italian if you can't find the Greek.
Cook couscous according to package. Set aside to cool. Peel, seed, and chop cucumbers. Halve tomatoes. Chop cilantro. Rinse black beans. Combine all ingredients and eat! This is definitely a "kitchen sink recipe". So feel free to omit whatever your family doesn't like. Or add something that sounds good. I often take out the beans and add green onions for DH. Yellow peppers would also go well and look pretty. I usually serve with chicken kabobs that have been marinated in greek yogurt, lemon juice, garlic, and basil. I think it's better at room temp, so I've been known to zap the leftovers for about 15 seconds in the microwave if they are coming straight out of the fridge.
ETA: The salad doesn't take the whole bottle of dressing. I use 1/2 bottle maybe?

Our favorite comfort meal is hamburger sliders on Hawaiian rolls. I get the not-so-lean hamburger meat and roll it into a golfball sized lump and throw it in a hot pan, and after it gets a crisp on it, smash the burger ball flat and thin with a spatula, and then flip it and cook to your desired doneness. They're nice and thin patties that you can load up with onions and cheese!

This is one of my favorite crock pot recipes: White Bean Chicken Chili In crockpot add: 1.25 lbs chicken breast 2 cans great northern beans or navy beans 1 can white corn or hominy (I drain the beans and corm because I like my chili to be less soupy) In seperate bowl combine: 1 envelope taco seasoning 1 can cream of chicken soup 1 can chicken broth 1 can chopped green chilies Stir then add to crockpot. Cover then cook on low for 8-10 hours Before serving, add in 1/2 cup sour cream to thicken and gently stir to break up chicken. Top with chopped green onion and monterey jack cheese if desired. It freezes and reheats really well, which is a bonus! To lighten up the recipe a little, I usually use ff cream of chicken soup, ff chicken broth, and reduced fat sour cream. It's still really good. I also often add some chopped jalapenos before cooking because it gives it a little kick.

Damn ladies you are making me hungry!! lgraceh we've been doing a lot of variations on Greek kabobs and salads this summer. I'm gonna mix up that couscous to go with the kabobs next time! We haven't been making dinner much except for Hello Fresh meals, which we don't have to think about, ha. But...we made foil packs with salmon last week, essentially this recipe, and it was so good. We don't eat a lot of seafood so it was nice to mix things up (you could totally use store teriyaki instead) and we made asparagus and brown rice to go with it. (Note: recipe credit to damndelicious.net)
Instructions Preheat oven to 375 degrees F. Line a baking sheet with foil. In a small bowl, whisk together honey, garlic, soy sauce, rice vinegar, sesame oil, ginger, Sriracha and pepper, to taste. Place salmon onto the prepared baking sheet and fold up all 4 sides of the foil. Spoon the honey mixture over the salmon. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed. Place into oven and bake until cooked through, about 15-20 minutes.* Open the packet and broil for 2-3 minutes, or until caramelized and slightly charred. Serve immediately, garnished with green onions and sesame seeds, if desired.

lgraceh good memory So, we only quit blue apron be there was an issue with their deliveries getting here late. Otherwise we were happy with it. So far we really like Hello Fresh, too. The instructions are a little less easy to follow for some reason and some of the meals are really basic, but they are really good and pretty easy. For some reason they seem a little less "complex" in flavor and they are a touch more expensive. But we still really like them!

Yes! This is the same recipe I use and it is absolutely delicious. It won me second place in a chili cook off last year.
