No really, I need some help. DD is allergic to dairy and eggs, and nuts and oats. I'm having a hard time getting used to eating that way (still BFing and I couldn't really eat a grilled cheese in front of her anyway) and still have my old favorite meals popping up in my head when meal planning because it's all I've ever known. I do have SOME vegan recipes that we like but I definitely need to broaden my horizons. I still have not tried fake cheese because im terrified it'll be nasty, lol.
Anyway, if y'all have any easy, tried-and-true favorites, please spam me. TIA!
I'd recommend the Thug Kitchen cookbook if you're okay with filthy/hilarious language. We are not vegan but I love different options and I think it's easier to start vegan and add cheese or chicken now that we aren't vegetarian.
We do lots of barley/rice bowl/burritos, soups (I usually strain them for DD because she has a hard time with the broth.) I like nutritional yeast and made some cashew cheese once and it was fine but I don't mind stuff without cheese.

First, don't bother with fake cheese. I've tried a lot and most ARE nasty so you are correct in your fear. Daiya shreds came close to being decent but I would not spend the money because they aren't THAT good. However, nutritional yeast is my jam. I still use it all the time even though we aren't vegan anymore. I made mac and "cheese" with it last night (clicky)!
Second, other than dishes with lots of cheese, it is usually pretty easy to make dishes vegan and still taste great. There are really good butter and milk subs. I use almond or coconut milk in everything. As long as it is unsweetened and unflavored you can't taste the difference. We really like Earth Balance.
We eat a lot of Mexican and Indian food because most recipes are vegan or easy to make vegan. I also really like the websites Forks Over Knives and Oh She Glows. You can find awesome recipes there. Hope that helps!

Ugh. I love Earth Balance but DD got hives from it the last time she ate it. Awesome. That's like the only tasty spread I've found around here that actually has NO dairy. So dumb. I need to live in a country with less cheese, lol.

There's a type of smart balance that's vegan, that's what we use for a spread. A few of them aren't, but we can find the vegan one just in the normal butter aisle.

I'm confused, are you vegan or do you eat meat? Because if you do, there are some Autoimmune Paleo blogs and cook books I can recommend. Autoimmune Protocol is nut free, dairy free, egg free
Not vegan. DD is allergic to eggs, dairy, nuts, and oats. Gluten is fine. I suspect a few other allergies but we'll find out soon. We love meat, lol. I'd be loving up on all the cheese and milk if I could, too, believe you me. Hahaha.
