Pinned it! I'm not usually one to cook with tofu but this looks really good so I'm going to try it. 4 chipotles? Is this four alarm hot?
The taste I had was pretty spicy for me, but I'm weak. I suspect once toned down by lettuce and tomato and sour cream it wouldn't be too bad. It was 4 chipotles and a poblano, but it was over a pound of tofu also. I also didn't use the pinto beans, just the tofu, which probably made it hotter.

I've had this recipe bookmarked forever but it seemed a little involved for a weekenight dinner. Sounds like I should stop being lazy and make it already.
