Last night H made chili... so I'm having leftovers of that tonight.
Tomorrow or Thursday I'm going to pop open one of the freezer meals xanthepants brought me. I am on my own T/W/Th in the evenings until 9 (aka after bedtime) and dinner is always a struggle lately.
I honestly need some inspiration lately, I have no desire to cook in the last few weeks, especially nights when H isn't home.

trixi282 do you like crockpot meals? I have a few that are super easy and mostly kid friendly. Or there's always tacos and spaghetti. Those are my go to meals when I'm out of time and ideas.

I love crock pot meals! And it's even better now that H goes to work a bit later so I don't need something that is OK sitting for 11 hours!
He leaves later now so I can have him start it (if I prep it early... since yeah, he'd have 137564 questions on what to do, haha) when he leaves and it will be ready when I get home... I'm open to all ideas and options!
somethingcleverer I got these 2 whole30 cookbooks that I just love! Well Fed and Well Fed 2. Pretty easy recipes and lots of different flavors. I've been using them weekly. You might like them. Her recipes are on her blog, too--it's called the clothes make the girl.
Sun: mocha rubbed pot roast and potatoes M: Stupid Easy Paleo's emergency meatballs over salad with some random roasted veggies and carrot ginger soup Tues: taco filling/chili concoction over spaghetti squash
Tuesday: Hot Dogs at Costco... Wednesday: Mediterranean Chicken Pasta Thursday: Vegetarian Chili and crusty bread Friday: Apple pancakes, eggs, sausages Saturday: Tuna melts with salsa, with corn
I'm not a great cook and I don't like to cook so we have easy meals all of the time. I'm also a vegetarian so I usually make something and then throw some meat on top for H. I told MH that if he wants a fancy meal then he better take me out for dinner because that is all I can do. Some easy go tos for me are: Stir Fry- White rice with frozen vegetables (steamed in my pampered chef microwave steamer) and store bough stir fry sauce. I add some frozen popcorn chicken for H. Patrick will have chicken, white rice, and broccoli and peas out of the veggie mix. Quesadillas- Patrick and I get refried beans and cheese ones and if I have some chicken cooked, I will throw that in with H's. If I'm up to it I make guacamole to go with it. Grilled cheese: I make it on sour dough bread and it brings it up a notch. Tomato soup to go with it in the winter. Egg burritos: I cut up whatever veggies we have in the fridge and wrap up eggs, cheese and veggies in a burrito, serve with tater tots. Patrick just has eggs and tater tots. Tortellini: Costco has come really good ravioli/tortellini choices so we do that a lot too.
All of these meals are served with either green beans, lima beans, peas, or broccoli since those are the veggies that all of us like. Sometimes we do fruit afterward but he usually has that for a snack so we skip it at dinner.
I just don't have time or desire to cook and this is all tasty and takes less than 20 minutes. I'll take the award for world's okay-est mom/wife in the dinner category.

trixi282, What about cooking some chicken breasts with some taco seasoning. You could eat on that for lunch and dinner for a few meals. I put peppers (red, green, yellow, orange) in the bottom of the crock pot, put in the chicken breasts (usually frozen) and then top the breasts with either taco or fajita season and some tomatoes. Then using a fork I pull them apart and shred them. I portion them out for my meals, sometimes freezing them for later. I use in quesidillas, nachos, tacos, salads, etc.
Also, I throw a beef roast in the crock pot with some water and when it's done, usually 7-9 hours, I shred that with a fork and remove the fat. Then I add bbq sauce and have pulled bbg beef. H and V eat it on a bun but I eat it by itself.
There are also several recipes with chicken and rice and I've even heard of doing lasagna in the crockpot. One of our quickest meals is goulash and it's a good hit with the kids.

Same to the bolded. My H is training to take a truck driver test and it's an hour and a half away, so a few nights out of the week, he is staying closer to the learning place. I really don't feel like making a whole meal for just me and M. So I tend to stick with easy ideas for just us. Might not be healthy, but shit, I'm pregnant and he's 3, we both just don't care.
trixi282 these are really yummy and they have very little clean up! I call them chicken foil packets (super creative). I lay out a piece of foil then place a chicken breast down with salt and pepper. On top of that I put a handful of chopped potato and then a handful of broccoli florets. Over the top you can pour Italian dressing, ranch, Cesar, a vinegarette. Just whatever you have that sounds good. Fold the foil over into a packet and bake at 400 for 40 minutes. It all turns out perfectly cooked. I've topped it with cheese and peppers instead of potato and broccoli. Onion, corn, and black beans. Squash, zucchini, and Parmesan.
That sounds good jfresh, I'll definitely be trying that. If done something similar with sausage, peppers and zucchini before. I never thought to do chicken breast! And don't know why I haven't thought to do the sausage either with H gone because he's not huge on zucchini or squash... Thanks for reminding me, and giving me other ideas!

Monday was beef & broccoli with potstickers, all courtesy of Trader Joe's freezer section. Tonight is pork in the crockpot with mac and cheese and a frozen veggie. Tomorrow is leftover pork, maybe pork quesadillas. Friday I may insist we go out to celebrate me surviving my first week back to work!

I made the foil packet chicken tonight jfresh. It was so good, I don't know why I haven't tried that before but I'm pretty sure it will be a regular dish at our house now.
