Advice wanted/rant ahead

So, as some of you know, I'm an optometrist and have worked in an office with two other doctors for the last 4 years. One woman holds the lease and we "fill in" (ie are self employed). I work mon, tues, thurs, fri and Saturday, so I am the one that's there the most. The other doc comes every Wednesday and the lease holder comes in every 6 weeks and works Thursday, fir and Saturday, giving me that weekend off (unpaid).
Overall, I was content in my job. The lease holder treats me decently and I like most of my patients. Last year, I asked for a raise and I got one after going through all the ways I have helped grow her practice. This year, I wasn't even asking for another raise, but was asking how she was going to disperse it since I would be going on my (unpaid) maternity leave. That's when she told me that she was giving me my original pay and that was a one time bump for one year. Ummmm what? I've never heard of that and it's super unprofessional and kind of a slap in the face. It's really hard to find a constant fill in, esp one like me where I actively try to increase our patient base. I asked if I could get a partial bump since I just had a kid and cost of living, blah blah and she said no. She told me that I wouldn't get paid more than my starting salary.
This week, I fell into an interview by chance. A friend knew of someone that was looking in my area and asked if I knew of anyone that would be interested. The problem is, it's a corporate job and the hours suck but the pay is great. I would work every since Saturday 9-5, but I would actually get paid time off and benefits, which this job doesn't have. If I get the job, they want me to start in a month and a half. My boss asked for 60 day notice (which I didn't realize at the time was really ridiculous, typical notice is one month) but I never actually signed a contract with her...it was more of a handshake deal where she wrote out the hours, pay, expectations in an email and I agreed to it.
I weirdly feel loyalty to my boss and don't want to leave her in a bind or burn bridges, but I also don't want to be at a job where ten years out, I'm still making the same as when I first graduated. Especially since I wanted to go to part time once my student loans were finally paid off.
I haven't gotten an offer yet, but if I do get an offer, I won't be able to give a 60 day notice. Should I just wait and say fuck it, and give her notice whenever I get an offer or should I give her a heads up now that I'm looking for other jobs so she can start looking for a replacement?
