Tuesday night I finally spiralized my first zucchini and I am hooked! Has anyone ever taken a look at Inspiralized ? Do you have a favorite trick to make comfort food healthy, or a favorite site/blog that shows you how?
I haven't heard of Inspiralized, but my favorite healthy comfort food is sweet potatoes. I whip them in my mixer and add butter, milk, and the tiniest bit of brown sugar.
My favorite healthy comfort foods are soups. There are so many options with soup and so many easy ways to add in tons of vegetables and flavor without adding a lot of unhealthy ingredients. I make lots of vegetable soup, chicken lemon soup, and minestrone without the noodles, all of which taste great but are pretty low calorie and full of vegetables!

I second soups. Some homemade chicken noodle or tomato soup with fresh crusty bread is amazing.
I agree pinkcat I love soups especially this time of year! I really want to try spiralizing but H is not into it and it's hard to do two separate meals. I also find that making comfort foods but limiting the portions is a nice way to get some of the treat without all of the guilt. I also add spinach to everything, ha...it's a sneaky way to add some health to otherwise rich dishes (lasagne and tomato sauces and even in meatloaf).
TTC since July 2014. CP March 2015. IVF #1 March 2016, 5R, 3M, 2F with ICSI. Transferred 2 on day 3. CP. Surprise BFP and then CP August 2016 (prep cycle for IVF). IVF #2: zero eggs retrieved IVF #3: 6R, 5M, 5F, 3 (2 8A and 1 11A) transferred, one "B" graded embryo frozen on day 5. BFP (at home 7dp3dt, confirmed 14dp3dt with 1552 beta) and U/S at 5w5d, 2 sacs and 2 yolks!

You can make a tasty grilled cheese with mostly goat cheese and then a sprinkle of shredded cheddar or whatever you like, and maybe some roasted red pepper or garlic, and the goat cheese is lighter! And using olive oil spray instead of butter

We do something similar, but with the pre-packaged Trader Joe's roasted red pepper and tomato soup. And sometimes I add a few whole wheat noodles.
Also, in a similar vein to soups - I love chili when the weather is cold and damp.
I am all about the "zoodles" in my house. Bonus that H likes them too. I do try to soak up a little of the water on a paper towel, then cook them in a pan w/ no additional liquid. They taste fantastic in homemade pad thai too. I make cauliflower alfredo a lot. And cauliflower mash instead of potatoes. I will also use oatmeal to make chicken fingers, but I'm not sure if that makes it that much healthier.

I just like her recipes, I bought a cheapie handheld one on Amazon
I got a cheap one on Amazon too and it works great. No need to spend lots. I worried I'd never use it too, but it's actually a lot easier than I expected.
Also, not that this is helpful in this thread, but you can make curly fries with it...

I use almond flour and tapioca flour to make chicken tenders (or really any kind of breaded chicken dish). I add some spices like garlic powder, onion powder, paprika, salt, pepper and whatever else sounds good and fry them on the stove in coconut oil. Sometimes I'll bake them in the oven, but either way they come out super tasty.

Zoodles are one of my favorite quick meals when DH isn't around. I just spiralize one zucchini (I have the cheap hand-held one), and sautee the zoodles in a pan with a little olive oil and seasonings. And top with a sprinkle of Parmesan. I wish I had one of the more robust spiralizers, so I could do other fruits and vegetables that are not zucchini shaped.

Probably buying one of those would be a smarter choice... just in case it does become clutter.
I bought a cheapy one and it didn't work and was impossible to clean. I threw it away after one time. I'm sure they are all made different though. I LOVE my spiralizer. I have the big one and bought it on amazon for like $30.

It's not as big as it may look, I just stuck it in the top of our plate cupboard. We do have a stupid number of cupboards, though (I actually want to get rid of some). Good luck!
