My bag of rice had a recipe for Cuban black beans and rice. Looked like mostly the rice, a can of black beans and a can of pinto beans, some cumin, and other basic seasoning. I was planning on adding some cut up chorizo we have in the fridge.

Breakfast for dinner. With bacon in the oven and a Dutch pancake that gets baked in my cast iron skillet. Plus eggs. So hands on cooking is about 6 minutes. So easy and delicious.

Trying to narrow it down between "homemade" tomato soup with grilled cheese sandwiches ("homemade" because I just take canned diced tomatoes, tomato paste, fresh basil, sugar, and salt and blend them up) or Mexican style salmon cakes with avocado cream sauce. I guess it depends on how ambitious I'm feeling when I get home from work...

I had some poached chicken in the fridge, which DS likes cold right now. For starch, buckwheat soba noodles (boil 5 minutes) tossed with sesame oil, chopped scallions and a dash of soy sauce. Prunes for fiber, because that's what DS eats right now. Nothing for DH or me, because we are getting over a stomach bug and don't have much of an appetite right now. I had some of the noodles but that was enough for me.
I'm thinking about setting out a lovely array of chocolate almond special k, vanilla almond special K, and raisin bran with maybe some cinnamon toast crunch for dessert. Less than 5 ingredients, less than 2 min, and cheap. I think I win
Don't judge me, but baked sweet potato fries with chopped BBQ, coleslaw, and pickles. All homemade except the pickles.
Chopped bbq what? Or is this a dish I don't know about? Sweet potato fries sound soooo good. I love copying the seasoning from the frozen ones at Costco.

MH says he likes it better than canned soup. I started doing it because Campbell's has flour in it, and I can't eat gluten. This is easier and cheaper than buying other soups. The sugar is really important because it cuts the can flavor. I only use like 1/2 t or so. I've also added garlic if I'm in the mood for it.

Cream of mushroom soup, salsa or picante, sour cream, chili powder mixed. Chicken, black beans, and cheese mixed with some of the sauce. Fill tortillas with chicken and bean mixture, cover with rest of sauce and bake.
Taco pie! Ingredients: 1lb ground beef, taco seasoning, can of beans, jar of salsa, tortillas, and shredded Mexican cheese.
I make taco meat as directed, then add kidney or black beans to the meat. You need a round casserole dish that fit your tortillas. Then you simply layer first a tortilla then a 1/4 of the meat/ bean mixture then salsa and finally cheese. Repeat 3 more times. Throw it in the oven at 350 for 20 minutes.
Black bean soup Sautéed onion, garlic, red pepper, celery. Add 2 cans rinsed black beans and 2 cups of broth. And 1tsp cumin. (And red pepper flakes but I leave them out). Cook at a boil for 20 minutes. Then hit with your IMMERSION BLENDER. (That's right, I use one too ). But only purée half the soup. Then a squeeze of lemon juice. Serve with bread or cornbread
