We finally bought our first home this past summer, which means I get to take over hosting Christmas! We've never hosted a holiday before, and I feel a lot of pressure to not disappoint, especially since Christmas Day is spent with my in-laws, who can be.....judgey.

My extended family has a Christmas Eve get together and at that get together we usually have something like lasagna as the meal, plus lots of munchies (i.e. cookies, pies veggie trays, cheese and crackers, jello/jello salads, chips and dips).
On Christmas day, or whatever day we have our immediate family Christmas, we always have some type of meat. The meat usually is ham, turkey, or pork. Then we have mashed potatoes and gravy, corn and at least one other vegetable, and rolls. It is just a nice meal.
My mom makes an amazing beef tenderloin with gorgonzola sauce. Other than that we stick to the basics of mashed potatoes, green beans with mushrooms, and salad.

We do Sushi for Christmas Eve, so not sure that will help. Our Christmas dinner must haves are some sort of meat (usually ham), mashed potatoes, yeast rolls, green beans, strawberry pretzel salad, chocolate meringue pie, and some sort of dressing (made an onion bagel and bacon one for Thanksgiving..it was super delicious)
