Monday - shredded beef tacos a la Kristykristyleelee Tuesday - we always have family dinner at my mom's since it's the only evening my sister doesn't work Wednesday - pork fried rice Thursday - slow cooker sloppy joes Friday - leftovers I'm terrible about having sides and we need more vegetables in our diet. I'm thinking salad should be served every day for dinner, but other than that, I'm not good at this. Suggestions?
Sunday- steak, mashed sweet potatoes, some kind of veggie
Monday- rolled stuffed chicken breast (pounded thin, coated in shake n bake or the like, stuffed with mozzarella string cheese and red pepper slices. Baked at 400 for 20 min), rice, veggie
Tuesday- pork chops and apples (slice apples small, saute in large pan in butter, add chops cook 4 min on first side, flip, top with apples add some brown sugar and walnuts, cover and cook 4-6 minutes until chops cooked), mashed potatoes, veggies
dogmama22 I get the steamable bags of veggies at Wegmans. It's $1 or $2/bag which is 4 servings. Microwave for 5 minutes and boom, veggies. I pay for the convenience. It's also how I make purees for O- steam and toss into the food processor.
Eta bc mistakes Also, I'm currently checking out the app bigoven per someone's suggestion on parenting. So far, I like it because it has tons of recipes. I just have the free version.

Tonight: crispy chicken bites and homemade mac & cheese bake (crispy chicken - cut up chicken breast (however much you'd like), dip in egg, then flour, then egg again, then panko crumbs (I usually add a few spices to my plain panko if I'm out of A seasoned one). Bake at 400 degrees for 30-40 minutes (depending on the size of your chicken chunks)
Tomorrow - my friend is coming over, so pizza
Tuesday - meetinng MIL for dinner
Wednesday - Crockpot chili and croissants
Thursday - ranch porkchops in the crockpot (I use a lb of pork chops, mix together 2 cans cream of chicken soup and dry ranch dressing packet, and pour the soup mix over pork chops. Cook for ~4 hours on high) and a frozen veggie (LOVE the steam bags!)
Friday - spaghetti and meatballs
Saturday - cheddar broccoli chicken bake with rice
dogmama22 do you have a recipe for that pork fried rice? We had Chinese food last week and that is the only thing my kids would touch, I figure I better learn how to make it lol.
Also, as far as sides go, we are not big on them either, but I try to at least have a grain and a veggie with every meal. My go-to's are rice (because its easy and we eat a lot of Asian inspired dishes) as well as steamed broccoli and/or carrots. The frozen steam bags that were mentioned are super easy!
Do you ever roast your veggies? DS1 loves roasted broccoli, beans, asparagus, zucchini, basically anything. Toss in EVOO and S&P. I usually google the correct temp/time depending on veggie.
We haven't done meal planning this week yet (behind due to holidays and messed up work schedules) but I love these threads and plan to contribute shortly!

Not very creative with cooking here this week. I think I'm stealing some of everyone's recipes here for the next few weeks.
This week Monday- chicken and rice, with a side of veggies (+1 to the steam able bags!) Tuesday- pasta with homemade meatballs, and garlic bread Wednesday- savory pork chops and mashed potatoes Thursday- leftovers if there are any, and if not we have a couple frozen skillet meals Friday- dinner out. MIL is here all week, that is my reward to myself.

Tonight was coconut curry chicken with rice and peas Tomorrow is a whole chicken in the slow cooker with bbq sauce. Not sure on a side yet. Then, in no particular order: Zuppa toscana (soup with sausage, kale, and potato), italian sausage packets (basically a pizza pocket), spaghetti (per children's request), and tacos. Lunch is leftovers.
Not sure what nights we will make these but here is what I'm thinking for the week
-Salmon roasted in oven on top of bell peppers and onions. I pan cook the veggies first on stove since the fish cooks quickly. Served on bed of potatoes or rice
-spicy ground turkey taco night.
-roasted chicken, garlic mashed potatoes and asparagus
-homemade pesto. Using kale and almonds to make the pesto. Serve w spaghetti.
We have a spaghetti squash so maybe I'll use that as a pasta one night thanks for the recommendations!

My husband ad libs it, but I'll have him tell me. I do know he uses garam masala, in addition to curry powder.

mrsdee1982, I'm intrigued by the zoodles! Do you use a mandolin or a different utensil? I have enough trouble with knives, mandolins terrify me - haha!

I'm real bad at planning ahead, and don't usually follow recipes, and am used to just looking in the fridge and cabinets and making things up as I go along that day based on what I have. Trying to start at least getting a head start with ideas a few days in advance now, so this thread is helping me. We did chicken fajitas Saturday and leftovers of those today. Tomorrow looks like it'll be baked salmon, fresh green beans and I think I'll make up some dill potato wedges. Wednesday I'm making jalapeno cheeseburger lasagna and probably leftovers of that Thursday. Friday something with broccoli, rice and chicken. Most likely either honey-mustard-parmesan-panko breaded chicken breasts, or sriracha bbq chicken.
I get to where I can plan the meat portion of the meal ahead of time for thawing purposes, but I just do the seasoning/flavor I feel that day. I can't possibly plan that specific that far ahead. Veggies/Sides we usually just have a few fresh things in the fridge (aside from the basics like peppers/onions/carrots/celery needed for standard recipes) each weekly grocery shop and just use those up as the week goes by, then either rice or potatoes, or infrequently pasta. I'm just so used to being on my own and only worrying about myself, not planning, not giving a shit if dinner isn't ready til 8PM when that means it's all fresh and fabulously prepared, or on the other hand if there is no dinner one day and just eating cereal or a sandwich or whatever. Meal planning is a whole new world for me. I have to take this real slow!
periwinkledaydreams I've been meal planning for the better part of 5 years. I used to do a month at a time, but since we no longer live 100 miles from Costco, I do about 2 weeks at a time. some things that help: -use a little notebook to make lists of meals and corresponding shopping lists. This way you don't have to reinvent your list every month. -when you have time, make a double batch of something that can be easily frozen and thawed later (like soup). -I use the slow cooker at least once a week, depending on my schedule. Usually Tuesday because DH works late that day, and I'm not out the door first thing in the morning.
Good luck. I also get a frozen pizza when all else fails.

We're doing Slow cooker Tortilla Soup tonight but with pulled pork instead of chicken. We made the pulled pork in the slow cooker a while ago and froze it. It's easy and tasty, and is enough for two meals.

I make a lot of crock pot dishes. So, I make a few up at a time and throw them in the freezer. Most of them can go straight in the crock pot, and if not I thaw them a day in advance. Since I'm at work during dinner time, H makes the rice, pasta, veggies, etc.

Good question. Once we all get home and settled, dinner doesn't usually start until 6. Which means it's not ready until 7-7:30. DS1 is often begging for food before then. We typically make it work, but some days DS is filled up on yogurt or goldfish and doesn't want dinner. I don't blame him but I try my hardest to make him wait.
