The tofu worked out nicely! H (who had the chicken version) said next time he would use salted pecans. We also used honey instead of maple syrup. I took a pic of the tofu but...it's not the most photogenic meal.
Since its not very pretty, I'll add this pic of some minestrone soup I made a couple of weeks ago.
I know you ladies will appreciate this- I made homemade sausage, pepper and onion stromboli for dinner tonight! So nice to actually have the time to really cook- DH coming home early is so helpful!
Not sure what nights we will make these but here is what I'm thinking for the week
-Salmon roasted in oven on top of bell peppers and onions. I pan cook the veggies first on stove since the fish cooks quickly. Served on bed of potatoes or rice
-spicy ground turkey taco night.
-roasted chicken, garlic mashed potatoes and asparagus
-homemade pesto. Using kale and almonds to make the pesto. Serve w spaghetti.
We have a spaghetti squash so maybe I'll use that as a pasta one night thanks for the recommendations!
A blizzard is coming for the next 3 days so I keep craving really hearty foods.
